Miniature Baked Cheesecakes

This strawberry cheesecake looks good it is different from the way other cheesecakes are made!

What you need to make these Miniature Baked Cheesecakes:
For the crust:
1 ½ C. Crushed butter cookie crumbs
4 Tbsp. Melted butter
For the filling:
8 oz. Cream cheese softened
⅓ C. Granulated sugar
1 large egg
⅓ C. Heavy whipping cream
1 Tbsp. Lemon juice
For the topping:
Whipped cream
Chopped strawberries
How to make these Miniature Baked Cheesecakes:
Step 1. Preheat the oven to 350 degrees.
Step 2. Add the cookie crumbs and melted butter to a bowl and stir to combine well.

Step 3. Place an even amount of the cookie mixture into the bottom of 8 muffin tin sections that have been lined with cupcake liners. Press the mixture down firmly to form a crust.
Step 4. In a mixing bowl, beat together the sugar and cream cheese until smooth and creamy.
Step 5. Mix in the lemon juice, egg, and heavy whipping cream.
Step 6. Top the crust mixture in each muffin tin section with a portion of the filling mixture.
Step 7. Bake for 20 minutes.
Step 8. Let cool and then chill the mini cheesecakes for at least an hour.
Step 9. Top with whipped cream and chopped strawberries before serving.
