What Do I Love About This No-Yeast Cinnamon Rolls Recipe?

NO kneading, NO rising, and yet the dough comes together like magic in just ONE bowl! So, yea NO extra cleaning either. Do I hear a “WOAH!”?

If you want more, these little babies are filled with the most irresistible buttery brown sugar and cinnamon spice combo. The top is slathered with creamy, dreamy cream cheese icing. OMG!

And, of course, the fresh buttery goodies are ready in under an hour. That has to be the fastest and most delicious way to your friends and family’s hearts.

How to Get a Really Soft Dough?

The key is to use buttermilk! If you don’t have it, whisk together 1 cup of milk + 1 teaspoon of lemon juice. Let the mixture sit for 10 minutes until it thickens.

And make sure to keep the melted butter warm! It will keep the dough soft and pliable.

I’m also very cautious with how much flour I add to my dough. I keep it minimal. If my dough sticks to the counter or rolling pin, I dust it with more flour. I think it’s always better to use flour while shaping the rolls than when making the dough.

Can I Bake These as Cinnamon Muffins?

If crusty and chewy are your ideal cinnamon roll features, bake them as muffins! It’s so easy and super fun. Cut 12 rolls, pop them in a greased muffin pan, and bake! They’ll puff up like a dream!

What Can I Serve Along with The Rolls?

A glass of cold milk, a cup of hot coffee, or steaming tea- all are classic choices. My family enjoys it with a bowl of hot oatmeal.

  • All-purpose flour
  • Sugar
  • Baking soda
  • Baking powder
  • Buttermilk
  • Pinch of salt
  • Butter melted and divided
  • Vanilla extract

  • Cream cheese softened
  • Powdered sugar
  • Buttermilk

How to make No Yeast Cinnamon Rolls:

Step 1. Preheat the oven to 425 degrees.

Step 2. In a mixing bowl, combine the flour, sugar, baking soda, baking powder, 1 cup buttermilk, pinch of salt, 4 tbsp of the melted butter, and vanilla extract. Beat until just combined.

Step 4. Turn the dough out onto a lightly floured surface and knead a few times.

Step 5. Divide the dough in half and roll each half of the dough into a rectangular shape about ¼ to ⅛ of an inch thick.

Can I Make Them Ahead?

If you’re in a fix, you can make the dough and assemble your heavenly rolls the night before. Remember to cover and refrigerate. When you’re ready to bake, bring them to room temperature first. But they might not be as puffy as they’d have been if you baked ’em right away.

Can I Freeze Leftover Rolls?

You can freeze your leftovers for two to three months. Place the cooled rolls in an airtight container or wrap them tightly in freezer bags. Reheat them at 350°F for 10 to 12 minutes. Ta-da!

What Icing Alternatives Can I use?

A simple mix of powdered sugar and cream cheese can make a delicious glaze. But if you want to take it up a notch, add maple syrup, melted chocolate, or a dollop of peanut butter. You can also use coconut cream and cinnamon for an exotic flavor. I love mine with a drizzle of caramel sauce. Yum!
