The presentation is just as beautiful as the taste itself. The outer skin of the potatoes is crispy while the center stays smooth and creamy. Prepared with ingredients you will probably find already in your pantry. Thyme and Rosemary bring such a fragrant aroma to the potatoes and balance out the butter and garlic.

Can you use other types of Potatoes?

You can switch out and use red, or sweet potatoes in this dish. Sweet potatoes will end up a bit softer but bring more of that sweet and earthy taste. Sweet potatoes are also considered healthier than yukon potatoes. Always slice thinly so the edges crisp up perfectly.

Try serving them for breakfast! Cook your favorite style of eggs with bacon or sausage and you have a home-cooked brunch perfect for the whole family. Even topped with hot sauce if you like extra spice. Make a runny egg and place it on top of the potatoes. Crumble your preferred breakfast meat and you have a tasty casserole.

Ingredients for Melt-In-Your-Mouth Melting Potatoes:

(2) lbs of Yukon Gold potatoes, peeled, cut into 1-inch slices

2 tbsp of melted butter

2 tbsp extra-virgin olive oil

2 tsp chopped fresh thyme

1 tsp chopped fresh rosemary

¾ tsp salt

½ tsp ground pepper

1 cup low-sodium vegetable broth or chicken broth

(5) cloves garlic, peeled and smashed

What do you need to make Melt-In-Your-Mouth Melting Potatoes:

How to make Melt-In-Your-Mouth Melting Potatoes:

Step 1. Preheat your Oven to 500 degrees F and make sure your oven rack is positioned in the upper third slot for perfect browning and cooking.

Step 2. In a large mixing bowl, add your cut potatoes, butter, oil, thyme, rosemary, salt, and pepper. Toss till everything is fully coated in all the amazing ingredients

Step 3. Arrange in an even layer in a 9×13 baking dish

(do not use glass unless it is oven safe)

Melt-In-Your-Mouth Melting Potatoes

Step 4: Slide the baking dish in the oven and roast for 30 minutes.

(Flip one time once it turns a golden brown)

Step 5: After 30 minutes, add in the broth and garlic. Continue roasting your Melting Potatoes until broth is fully absorbed by potatoes and skin has a rich, golden brown color. About 15 additional minutes.
