For longer term storage, lay the roasted tomatoes out on a baking sheet in a single layer and place in the freezer for 2-3 hours until frozen solid. Transfer the frozen tomatoes to a resealable freezer bag and freeze for up to 3 months. Thaw in the fridge for several hours before use.

Instructions
- Preheat the oven to 400°F. Lightly grease a baking sheet with cooking spray or oil.
- Slice cherry tomatoes in half and layout on the baking sheet in a single layer.
