Ingredients for Spinach Chicken and Mushroom:

6 Thin cut chicken breast cutlets

1 Container green onion cream cheese

¼ C. Olive oil

½ C. Chicken broth

1 Large container sliced mushrooms

1 Bag fresh baby spinach leaves

Garlic herb seasoning

Black pepper to taste

8 oz. Shredded mozzarella cheese

Ingredient Notes & Substitutions

Chicken breast cutlets: If you prefer to cook with thighs and legs, you can do so. I prefer chicken breasts for a healthier take on this meal. You can also opt for a rotisserie chicken, which can be found at a local supermarket in most states.

Green onion cream cheese: Swap the green onion cream cheese for traditional cream cheese if you’re having difficulty finding it at your nearest grocery store. You can always add freshly chopped green onions to this dish once it’s complete, if you have a craving for that green onion taste!

Sliced mushrooms: If you don’t have any fresh mushrooms available, you can also use 2 cans of mushrooms, instead! Or omit them altogether if you’re not a fan of their texture.

Fresh spinach: Similar to the mushrooms, you can swap the fresh spinach for canned spinach. This may change the texture a bit. You’ll want to squeeze all the liquid from your canned spinach, however, if you choose to go this route.

How to Make It

Step 1. Preheat the oven to 375 degrees. As your oven preheats, you can prepare the rest of the ingredients called for in this recipe.

Step 2. Place the chicken into the bottom of a 9×13 baking dish and season with the pepper and garlic herb seasoning.

Step 3. Spread the mushrooms and spinach on top of the chicken. Ensure you do so evenly.

Step 4. Warm up the cream cheese (you can do so in the microwave for less than 30 seconds to help soften it), and whisk together the cream cheese, olive oil and chicken broth in a mixing bowl.

Step 5. Pour the cream cheese mixture over the ingredients into the baking dish.

Step 6. Place a tented piece of aluminum foil gently over the casserole dish. Be careful not to seal it completely. A bit of airflow is necessary to help your spinach chicken mushroom cook well.

Step 7. Bake for 20 minutes. Remove the foil and bake for another 20 minutes.

Step 8. Layer the mozzarella cheese on top of the mixture and bake another 10 minutes before serving.

Tips for Success

Use freshly grated mozzarella cheese whenever possible (such as purchasing a block of cheese and grating it yourself). Freshly grated cheese tends to melt better than when using prepackaged, shredded cheese (due to additives and preservatives).

Storage & Reheating

Thankfully, you can store this delicious spinach chicken and mushroom meal for later! Simply store leftovers in airtight containers or Tupperware for up to 4 days in your refrigerator.

You can attempt to freeze it for up to 2 months in a similar container. Keep in mind that the texture of this dish may change slightly due to the added spinach and cream cheese.

To reheat, remove your containers from your refrigerator and allow them to come to room temperature (or close to it). Reheat in a preheated oven at 300 degrees (Fahrenheit) for 10 to 15 minutes, per serving, or until warmed through. You can also reheat single servings of this spinach chicken and mushroom meal for 2 to 3 minutes in the microwave.
