Easy & Healthy Cucumber and Tomato Salad that’s so light and refreshing! It’s great to serve with Hawaiian Chicken KabobsPork Tenderloins or Honey Garlic Salmon.

This classic combination of cucumber, tomato and onion is so good and it’s no-fuss to make a healthy salad!

Cucumber and Tomato Salad

It’s very easy to make Cucumber and Tomato Salad, first slice all the vegetables then make the dressing and toss them with it!

Cucumber and Tomato Salad

What You Need:

1 lb. Baby cucumbers sliced

1 Pint cherry tomatoes cut in half

1 Small onion thinly sliced

½ C. Shredded Parmesan cheese

For the dressing:

½ C. Balsamic vinegar

⅓ C. Olive oil

1 tsp. Italian seasoning

¼ C. Sugar

1 tsp. Minced garlic

Pepper to taste

How To Make Cucumber and Tomato Salad:

Step 1. In a large bowl, toss together the cucumbers, tomatoes and onions.

Step 2. In a smaller bowl, whisk together the ingredients for the dressing.

Step 3. Pour the dressing over the vegetables and toss to coat well.

Step 4. Stir in the shredded parmesan and chill before serving if desired.
