What is Yellow Rice?

Yellow rice is a rice dish that’s yellow! The beautiful color comes from turmeric, a highly beneficial spice that has been used in Indian cooking for centuries. This rice is browned in a pan and seasoned with aromatics before a quick steam in chicken broth for extra flavor. This one pan rice side dish is a perfect accompaniment to chicken, fish, pork, kabob, or authentic indian curries.

This recipe uses the following, easy to find ingredients.

  • Butter – Use salted butter for extra flavor, save the unsalted butter for baking.
  • long-grain white rice – Any long grain white rice will do the trick. I like basmati rice since it has an enticing nutty aroma.
  • minced garlic
  • onion powder
  • ground turmeric – Ground turmeric is a better choice than fresh for this recipe, fresh turmeric can be tough and needs a longer cooking time to become tender.
  • chicken broth – You can sub in salted water or vegetable broth if you don’t have chicken broth or you want to make this dish vegetarian.
  • Kosher salt
  • black pepper
  • fresh cilantro – Used as a garnish, you could use parsley, dill, or mint instead.

Ingredients 

  • 3 tablespoons butter
  • 1 cup long-grain white rice
  • 1 teaspoon fresh minced garlic
  • 1 teaspoon onion powder or dried minced onion
  • 1 teaspoon ground turmeric
  • 2 cups chicken broth
  • 1/2 teaspoon Kosher salt or to taste
  • ground black pepper to taste
  • 2-3 tablespoons fresh cilantro chopped

Instructions

  • Add the butter to a skillet over medium heat to melt. Add the uncooked rice and cook for several minutes until the rice has turned golden brown.
  • Add the garlic, onion powder, and turmeric to the rice, stir to combine and cook for at least 1 minute to toast the spices.
  • Add the chicken broth to the pan and bring to a rapid simmer. Add salt and pepper, reduce the heat and cover with a lid. Let the rice steam for at least 25 minutes until tender.
  • Fluff the rice with a fork and garnish with cilantro before serving.
