Pecan Banana Baked Oatmeal 

Ever since I was little, I have always enjoyed a big bowl of oatmeal in the morning. It is a heart healthy way to kick-start your day! It’s not like many breakfast foods where you can feel weighed down and hungry again in a few hours. The first time I made baked oatmeal at home was over a year ago, and I have been making the same recipe ever since. The Baked Apple Walnut Oatmeal is one of my favorite breakfast recipes, and we have it a few times a month.

This time I wanted to mix it up a bit and try a baked banana oatmeal. I landed upon a recipe that looked delicious and adapted it slightly to include some of my favorite ingredients from the baked apple oatmeal. The result was fabulous! It reminds me of a mix between an oatmeal bar and traditional creamy breakfast oatmeal. Packed with healthy oats, bananas, and pecans, how can you go wrong?

Do you ever get tired of eating the same boring breakfast every day? I do, too, so that’s why I enjoy this pecan oatmeal recipe. It’s so flavorful, and every time I eat it, I am so pleased with all the flavors and texture. I have yet to get tired of eating it, and I bet you are sure to feel similar! 

Can I Swap Pecans Out In This Recipe 

Of course! If you are out of pecans or just aren’t a huge fan of them, you can either omit them entirely or swap them. We like to use walnuts too. Another tasty option would be to use almonds or hazelnuts. Both would taste great in this banana baked oatmeal. 

You can also add in dried fruits like raisins or cranberries too. They will give you some extra vibrant flavor and enhance the texture as well. 

How to Know When Baked Oatmeal Is Done 

Baked oatmeal is similar to a cake or brownies when it comes to checking doneness. Simply insert a toothpick in the center, and if it comes out clean, then it’s done. Otherwise, you should bake it a little bit longer. 

Can I Add Other Fruit To The Recipe 

Adding other fruit will give you a variety of flavors that will be great for different occasions. Some of our favorites to add in are strawberries, peaches, or blueberries. Play around with the flavors until you find a combination that works for you. You can literally make it differently every time if you want! There aren’t any wrong answers so go crazy. 

Does This Recipe Double Well 

Yes, you can easily double this recipe. We make it in an 8 x 8 baking dish with just one batch. If you decide to do two batches I recommend a 9 x 13 inch baking pan. This will also mean that the baking time is going to need to be adjusted as well. Bake them for 25-30 minutes and check. It may need several more minutes because it’s bigger.

Can I Make This Ahead of Time 

Oh yes, making this oatmeal ahead of time is brilliant because you will have it handy whenever you are ready to eat it. We often meal prep and make a huge batch ahead of time, then cut the pieces. Wrap each piece with plastic wrap and then put them all in a food storage container. Chill in the fridge for up to 4 days. Warm it in the microwave for a few seconds until it’s the temperature you like best. You can also freeze the baked banana oatmeal as well. Freeze for up to 3 months and thaw in the fridge overnight. 

Ingredients

  • Uncooked oats fashioned oats
  • Salt
  • Packed brown sugar
  • Cinnamon
  • Chopped pecans
  • Baking powder
  • Milk
  • Pure vanilla extract
  • Bananas
  • Large egg

How To Make Baked Oatmeal 

First Step: Begin by turning on the oven to 375 degrees F. Then add some nonstick cooking spray to your 8 x 8 inch baking dish. Set aside for later. 

Second Step: Combine the uncooked oats, 1/2 cup of brown sugar, salt, pecans, cinnamon, and baking powder in a large bowl. Set aside. 

Third Step: Mix the milk, mashed bananas, vanilla, and egg together in a shallow bowl. Then slowly add the mixed milk mixture into the oat mixture. Stir well. 

Fourth Step: Add a layer of sliced bananas to the bottom of the baking dish. Then pour the oat mixture on top of the bananas and add a few more banana slices. 

Fifth Step: Bake the banana baked oatmeal for 25 minutes. Take the pan out of the oven and add the last 2 tablespoons of brown sugar. Turn on your broiler and put the oatmeal back inside of the oven. Let it broil for 1-2 minutes or until you see the brown sugar has melted. Serve warm and enjoy this heavenly treat.

Ingredients 

  • 2 cups uncooked oats fashioned oats
  • 1/8 teaspoon salt
  • 1/2 cup packed brown sugar plus 2 tablespoons
  • 1 teaspoon cinnamon
  • 2 tablespoons chopped pecans
  • 1 teaspoon baking powder
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 3 bananas, 1 mashed and 2 sliced
  • 1 large egg, beaten

Instructions

  • Preheat oven to 375° F. Spray an 8×8-inch baking dish with nonstick cooking spray; set aside.
  • In a large bowl, combine oats, salt, 1/2 cup brown sugar, cinnamon, pecans, and baking powder; set aside.
  • In a small bowl, combine the milk, vanilla, mashed banana and egg. Add milk mixture to oat mixture; stir well.
  • Line the bottom of the baking dish with half of sliced bananas. Pour the oat mixture over the bananas and top with the remaining sliced bananas.
  • Bake at for 25 minutes. Remove the oatmeal from the oven and sprinkle the remaining 2 tablespoons of brown sugar. Turn the broiler on and place the oatmeal back in the oven. Broil for 1 to 2 minutes, or until the brown sugar melts. Serve warm.
