- 3 Large eggs
- 9 Large egg whites
- ¼ C. Plain Greek yogurt
- 2 C. Broccoli florets
- ¼ C. Red bell pepper chopped
- ¼ C. Orange bell pepper chopped
- ½ C. Onions chopped
- ½ C. Cubed ham
- 2 Tbsp. Olive oil
- 1-2 C. Spinach
- ¼ C. Shredded parmesan
- 1 tsp. Italian seasoning
- 2 tsp. Minced garlic
- Salt and pepper to taste
How to make 15 Minute Loaded Omelette:
Step 1. Preheat the oven to 400 degrees.
Step 2. Heat the olive oil in a large ovenproof skillet over medium heat.
Step 3. Add the broccoli, peppers, and onions to the skillet, and saute for several minutes until they are just beginning to become tender.

Step 4. Toss the cubed ham, salt and pepper to taste, minced garlic and Italian seasoning into the skillet, and cook a minute longer.

Step 5. Place the spinach into the skillet, and cook until it is just wilted.

Step 6. In a mixing bowl, blend the eggs, egg whites and Greek yogurt until frothy.

Step 7. Pour the egg mixture into the skillet, and remove it from the heat.

Step 8. Sprinkle with the shredded parmesan.

Step 9. Bake the omelette in the oven for 10 minutes before serving.
