Why I love 15 Minute Loaded Omelette?

Omelettes made with tender eggs, veggies, and cheese are great for breakfast or a light dinner, but I always find folding them a bit challenging. This recipe eliminates the need for folding by baking it in the oven. Here’s why I love them.

  • Low cholesterol by using mostly egg whites.
  • Loaded with fresh veggies.

What toppings to put in an omelette?

Traditional omelettes are made with beaten eggs, cheese, and veggies. Many also contain meats like ham, sausage, or bacon. Veggies range from onions and peppers to spinach, broccoli, and tomatoes.

Should you put milk or yogurt in an omelette?

This recipe calls for Greek yogurt, but you can make an omelette with milk, half and half, sour cream, or even heavy cream, depending on your preferences and what you have on hand.

How to serve 15 Minute Loaded Omelette?

The 15 Minute Loaded Omelette is loaded with fresh veggies, ham, and cheese, making it a nearly complete meal on its own. You can serve it hot from the oven with a toasted muffin or bagel. Some prefer to serve home fries on the side for a more robust meal.

Ingredients:

  • 3 Large eggs
  • 9 Large egg whites
  • ¼ C. Plain Greek yogurt
  • 2 C. Broccoli florets
  • ¼ C. Red bell pepper chopped
  • ¼ C. Orange bell pepper chopped
  • ½ C. Onions chopped
  • ½ C. Cubed ham
  • 2 Tbsp. Olive oil
  • 1-2 C. Spinach
  • ¼ C. Shredded parmesan
  • 1 tsp. Italian seasoning
  • 2 tsp. Minced garlic
  • Salt and pepper to taste

How to make 15 Minute Loaded Omelette:

Step 1. Preheat the oven to 400 degrees.

Step 2. Heat the olive oil in a large ovenproof skillet over medium heat.

Step 3. Add the broccoli, peppers, and onions to the skillet, and saute for several minutes until they are just beginning to become tender.

Step 5. Place the spinach into the skillet, and cook until it is just wilted.

Step 6. In a mixing bowl, blend the eggs, egg whites and Greek yogurt until frothy.

Step 7. Pour the egg mixture into the skillet, and remove it from the heat.
