If you love fancy scrambled eggs but think it is too hard to make at home, I am here to set your straight. This western omelet is so easy to make, you will never need to go out to eat again. Well, at least not because of a craving. You can now have these scrambled eggs with cheese anytime you want it.

Can you make and freeze these fancy scrambled eggs?

Many people know you can make ahead breakfasts, but a lot of people do not think about freezing them. It is easy to do and it can be much easier to cook once and eat for days. If you want to make these fancy scrambled eggs ahead and freeze them for later, it is actually very easy. Make the western omelet and then let the ones for the freezer cool. I like to make them and eat one right away for breakfast and then freeze the rest. Once cooled, if you are skilled enough, more the omelet to a freezer bag. This is great because it takes up less space. If you are not able to do that, that’s ok. Store the omelets in an airtight container with a layer of parchment or wax paper, even foil will work, between each one. One other option is to freeze the omelets on plates or anything that you can put in the freezer. Once frozen, the eggs are easily handled and you can move them to whatever option you like best. Just make sure they are protected from the air so they do not get freezer burn.

The best way to keep the egg scramble from sticking to the pan is to use butter, oil or cooking spray. I use oil for the sauteing and butter for the eggs in this recipe, but it is easy to change it up to what you like to use. The important part is to remember to grease the pan so that it does not stick.

  • Eggs
  • Olive oil
  • onion
  • bell pepper
  • ham
  • Unsalted butter
  • Heavy whipping cream
  • Mozzarella cheese
  • Cheddar cheese
  • Garlic powder
  • Salt and pepper

How to make a western omelet egg scramble

Add 1 tbsp oil to a skillet over medium-high heat on the stove.

Mix in the chopped onions and peppers, and cook for a few minutes until they begin to soften.

Add in the cubed ham, and cook for 1 minute more.

Pour in the beaten eggs, and scramble until cooked to your liking.

Mix in salt and pepper to taste, and remove the egg mixture from the stove. make the cheese sauce

In a small saucepan, melt 2 tbsp of butter over medium heat on the stove.

Pour in the heavy whipping cream.

Sprinkle in the mozzarella and cheddar cheese, and stir until smooth and creamy.

Add in the garlic powder, and salt and pepper to taste. Stir until thickened, and serve half of the egg mixture covered in half of the cheesy sauce.
