Can you add other veggies to this soup recipe?
To pack in even more nutrients, hearty veggies like sweet potato, shallots, green onion, kale, cabbage, or peppers can be added for extra flavor.
What if I can’t find abc style pasta?
This soup doesn’t have to have ABC noodles to taste amazing. Pastina, orzo, or elbow macaroni noodles can all be used in its place.
Tips for Success
- Make sure the vegetables are fork tender before serving, this will also help even out the flavors in this soup.
- If you need more broth in your soup add extra beef stock or water and simmer.
- Do not over cook the noodles. They cook in about 10 minutes. Take one out and taste it to make sure it’s done. Over cooked noodles will be mushy and soak up all the broth.
How to know when pasta is done cooking?
The pasta is done when it is just al dente. Remember that the pasta will continue to soften after the soup is done cooking. Pull out a few pieces of pasta and test to see if they are done. They will also be noticeably bigger in size when they are cooked.
Can I refrigerate any leftover vegetable ABC soup?
Store leftover alphabet soup sealed in the fridge. Leftovers can last up to 4 days in the fridge. Reheat in the microwave or on the stove in a soup pot until warmed through. You may need to add additional broth or beef stock when reheating if the soup has dried out.
Does this soup freeze and thaw well?
For long term storage you can easily freeze this soup! Let the soup cool completely and freeze in a sealed container for up to 4 months. Make sure you leave room in the container for the soup to expand as it freezes.
Can I make a larger batch of soup?
This ABC soup can be made in double or triple batches. It all depends how big your soup pot is!
