Ingredients:

  • Ground beef
  • Yukon Gold Potatoes
  • Mixed vegetables Undrained
  • Sweet corn Undrained
  • Condensed tomato soup
  • Petite diced tomatoes
  • Cut green beans Undrained
  • Pinch Salt
  • Dash Pepper
  • Sugar

Instructions

Step 1. First, you want to peel your potatoes and cut them into small cubes.

Step 2. Brown and drain your ground beef. Easy peasy!

Step 3. Take your potatoes and place them with the beef in your slow cooker.

Step 4. Open all of your canned vegetables, diced tomatoes and can of tomato soup and add them to the slow cooker. I always suggest adding salt and pepper to taste!

Step 5. Now here is the secret ingredient that really sets this recipe apart from your average soup – add sugar! You won’t regret it.

Step 6. Mix it all together well. Let it simmer on low in your slow cooker for 2 – 3 hours.

Using chicken broth will change the flavor of the soup, especially if you use beef.  You may want to consider using chicken as the meat, in order to use chicken broth.

What should I serve with this Cowboy Soup?

You could serve this soup with an additional slice of meat on the side. I usually provide a loaf of baguette bread to be eaten with the soup.

How should I store, freeze and reheat this Cowboy Soup?

If you have soup remaining, place it in an airtight container and into the refrigerator. The soup will last in the fridge for 3 days. The soup can also be frozen for up to 3 months. To reheat the Cowboy Soup Pour it into a pan on the stove and heat over medium heat until it is heated through.

Can I make this in advance?

The soup can be made ahead of time and stored in the refrigerator or freezer. Thaw in the fridge overnight and reheat as directed.
