This is the perfect soup to prepare ahead or after a busy day, when you have so many other things to do and you just can’t think about dinner. Since you have to peel the potatoes and ground the beef, it’s not your typical dump and go crock pot dinner but, it’s only a few steps. Better yet, you only have to wash a skillet.  It can last a few days which makes it even better for leftovers for lunch or dinner.

Hearty Crockpot Cowboy Soup

My kids love sitting down to “cowboy” stew! They just love the name. Bean, potato and beef stew just doesn’t sound appealing to kids. But Hearty Crockpot Cowboy Soup is an excellent lunch even to throw into a thermos. I would serve it with warm croissants or cornbread and top with shredded cheese and sour cream.

If you want you can even add in some mild chili peppers, or green and red peppers to give it an extra kick. You can customize it to your liking. No matter what, it will definitely be something you will make again and again.
