2 Large beefsteak tomatoes cut into thick slices

1 tsp. Dried basil

1 tsp. Dried Oregano

1 c. Fresh grated parmesan

Salt and pepper to taste

Chopped parsley for garnish

Tomatoes: Use large, firm beefsteak tomatoes. Cut each into slices that are about 1/4-inch thick; you can make them a little thicker if you prefer. You want the slices to provide a sturdy base for the cheese, and smaller tomatoes may not work as well. If you have to use different tomatoes, look for ones that aren’t mostly seeds on the inside.

Oregano, basil, salt, and pepper: These help make the flavor a little more complex and deep. You can play around with seasonings if you want, and you can also try using spice mixes, like mixed Italian herbs or even taco seasoning.

Fresh Parmesan: It’s much easier to find fresh Parmesan now, be it pre-shredded and bagged or in a block that you can grate yourself. Don’t use the dry stuff in the shelf-stable canister, though. The canister version is much saltier and won’t melt as well as fresh cheese.

Chopped parsley: Give the finished tomatoes a little bit of color with some vivid green parsley. Use Italian/flat leaf parsley, not the curly version. If you don’t have parsley, use thin strips of fresh basil.

How to Make It

Step 1: Preheat the oven to 400 degrees Fahrenheit.

Step 2: Line a baking sheet with parchment paper. Place each tomato slice on the sheet. The parchment paper helps prevent the slices from sticking to the baking sheet and makes clean-up a lot easier.

Step 3: Top each tomato slice with salt and pepper to taste. Start with a light coating because you can always add more, but you can’t really remove excess salt and pepper.

Step 4: Sprinkle the oregano and basil over the tomatoes. If you want, you can reserve a tiny bit of the oregano and basil to add on top of the cheese, too.
