I can go on and on about these yummy mini BLT bites. But the reasons I’m sharing the recipe with you are:

  • They’re so flexible. You can use whatever bread and toppings you like.
  • The salads are great for using up leftover ingredients from your fridge.

There’s no one way, and certainly, none that’s “right” or “wrong.” But I do a twin tower layering: one slice of bread, then a piece of lettuce, followed by a tomato slice and a piece of bacon – and repeat. I finish my layering with a slice of bacon because of the crunch. The bread would be too soft. Oh, and don’t forget to drizzle your fav sauce at the end. It could be mayo or sriracha. You pick.

Here’s what I’ve learned in the process of perfecting this BLT bites recipe:

Tomatoes are a bunch of watery discs. If you don’t drain and pat them dry on several layers of paper towels, they’ll make the sandwich soggy.

Poke your sandwiches with a toothpick BEFORE you bake them. If your bacon gets too crispy, it’ll shatter when you try to push the toothpick through.

Thick bacon strips are good bacon strips. Yes, they’ll take longer to cook, but they’ll also be easier to skewer. Plus, who minds some extra bacon, right?

Variations:

Trust me; you’ll enjoy every bit of the original BLT bites recipe. But you can give it a spin for something different:

  • If you like some heat, sprinkle a pinch of dried pepper flakes over the mayo before you bake your BLT bites.
  • If you prefer a creamy texture, replace mayonnaise with cream cheese.·  
  • Change up the flavor profile by swapping out the bacon for other toppings like turkey, salmon, or diced mushrooms.

Step 1. Cook the bacon and cut each piece into 4 small pieces.

  • 8 Campari Tomatoes
  • Lettuce
  • Mayonnaise
