Storage Instructions:

Wrap the cake in aluminum foil and keep it at room temperature for up to 3 days or refrigerated for up to a week. If you want to enjoy it warm, you can give it 20 seconds or so on a plate in the microwave (remove the foil first!)

Variations and Substitutions:

Although you can switch the brown sugar for white sugar, you aren’t going to end up with the same warm, earthy, rich caramel flavor if you do this. It’s recommended that you either use brown sugar or a brown sugar alternative such as “Swerve brown sugar” which is an artificial sweetener with all the flavor of brown sugar (minus the calories and carbs).

You can also switch the toffee chips for butterscotch or vanilla chips, or add a pinch of ground cinnamon to the batter. Oh, and you might also wish to add a handful of chopped nuts on top of the cake before baking.
