This gorgeous Layered Cherry Coke Cake Recipe is a real show stopper! Pink homemade frosting drizzled in chocolate ganache, this is the best homemade layered coke cake ever.

Layered Cherry Coke Cake Recipe

My ultimate favorite desserts have two things in them. Cherries and chocolate! The combination is to die for, and it’s easily one of my favorite combinations ever. Then when you add cherry coke to this cake, it takes it from delicious to WOW in seconds.

There is not a doubt in my mind this will quickly become a go-to cherry coke recipe for you too.

I’m not sure if it’s the layers of moist cake, chocolate ganache, or the cherry frosting that really sucks you in. While you are at it, you should try my Cherry Dr. Pepper Cake and my Black Forest Brownies. They are both finger-licking good. 

What Brand Of Cherry Cola Do You Use

I use regular Coca-Cola Cherry. It’s an incredible flavor, and I love everything about it. Plus, I can drink some while I am making the cake. 😉

You could use an off-brand cherry coke as well as Cherry Pepsi if you would rather. As long as it’s dark cola with cherry, it will work. 

Are There Real Cherries In This Recipe 

You will find that there is maraschino cherry juice in the cake as well as actual cherries in the frosting. The cherry coke cake is also garnished with cherries as well.

Piping Tips For Decorating Cake 

There are a few things you can do to set yourself up for success when it comes to cake decorating. Here are a few tips:

  • Use quality materials like piping bags and plastic couplers
  • Have an assortment of piping decorating tips
  • Place the cake on a lazy susan and spin it as you decorate
  • Try a few practice strokes so you can get the hang of it

How to Store Cherry Cola Cake 

This coke cake should be stored in the refrigerator and will last up to 4 days. Keep it airtight in a food storage container to keep it fresh. 

Can You Freeze Leftover Cake 

Yes, you just need to place the layered coke cake in a freezer container and freeze for up to 2 months. Defrost in the fridge or on the counter for 30 minutes – 1 hour before serving.

Ingredients

Cherry Cola Cake Ingredients:

  • Flour
  • Sugar
  • Cocoa Powder
  • Baking soda
  • Baking powder
  • Kosher salt
  • Cherry Coke soda
  • Canola Oil
  • Sour cream
  • Large eggs
  • Pure vanilla extract
  • Maraschino cherry juice

Cherry Frosting ingredients:

  • Unsalted butter softened
  • Powdered sugar
  • Heavy whipping cream
  • Cherry extract
  • Maraschino cherry juice
  • Pink gel food coloring
  • Stemless Maraschino cherries, dried and cut in half
  • Small jar of Maraschino Cherries with stems for toppings

Chocolate Ganache Ingredients:

  • Semi sweet chocolate chips
  • Heavy whipping cream

Supplies Needed:

  • 3 – 9inch round baking pans
  • 3 – 10inch round cake board
  • 1 cake leveler
  • 1 large squeeze bottle
  • 1 Medium ice cream scooper
  • 1 large piping bag fitted with a star tip

How to Make Cherry Coke Cake

Cherry Cola Cake Directions:

  1. Heat the oven to 350 degrees F. Then spray the baking pans with non-stick baking spray
  2. Whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until combined in a large bowl. 
  3. Whisk together the cherry coke, canola oil, and sour cream until combined and smooth in a large bowl. 
  4. Add in the eggs, vanilla extract, and maraschino cherry juice. 
  5. Gradually pour in the wet ingredients into the dry ingredients. Then whisk until combined. 
  6. Pour and divide the batter into the 3 cake pans. 
  7. Bake the coke cake in the oven for 25-30 minutes or until a toothpick comes out clean. 
  8. Allow the cherry coke cake to cool completely.
  9. Take the cake layers and place them onto the cake boards. 
  10. Using the cake leveler, carefully remove the domes of the cakes. 

How to Make Homemade Cherry Frosting :

  1. Cream together the butter, vanilla, powdered sugar, cherry extract, maraschino cherry juice, and heavy whipping cream in a stand mixer. Combine until creamy and stiff with peaks.
  2. Scoop 1 cup of the cherry frosting into the piping bag. 

Directions to build the cake:

  1. Place one layer of cherry cake onto the cake board. 
  2. Scoop out 4-6 scoops of frosting using the ice cream scooper. Then smooth evenly on the first layer of cake. 
  3. Sprinkle about ¼ C of the chopped cherries on top of the frosting and lightly push down. 
  4. Add another layer of cherry cake on top. Then spread more frosting. 
  5. Add another ¼ C of cherries on top of the frosting. 
  6. Put the last layer on top and frost the remaining cake with remaining frosting. 

Chocolate ganache directions:

  1. Heat up the heavy whipping cream until steaming in a small pot.
  2. While heavy whipping cream is heating up, pour the chocolate chips into a heat-proof bowl.
  3. Once the heavy whipping cream is heated, pour over the chocolate chips. 
  4. Allow the mixture to sit for 1 minute before whisking until smooth. 
  5. Gently pour the ganache into the squeeze bottle.
  6. Carefully, pipe dollops of ganache over the edge of the cake. 
  7. Pipe dollops of frosting onto the top of the cake. 
  8. Place a Maraschino Cherry with stem into the dollops of frosting. 
  9. Cut and serve and enjoy.

Ingredients 

Cherry Cola Cake Ingredients:

  • 2 C Flour
  • 2 C sugar
  • 3/4 C Cocoa Powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp kosher salt
  • 1 C + 3 tbsp Cherry Coke soda
  • ½ C Canola Oil
  • 1 C sour cream
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • ¼ C maraschino cherry juice
  • 3 - 9 inch round baking pans
  • 3 - 10 inch round cake board
  • 1 cake leveler

Cherry Frosting ingredients:

  • 3 C unsalted butter, softened
  • 6 C powdered sugar
  • 5 tbsp heavy whipping cream
  • 1 tsp cherry extract
  • ¼ C Maraschino cherry juice
  • 2 drops of pink gel food coloring
  • 1 C stemless Maraschino cherries, dried and cut in half
  • 1 Medium ice cream scooper
  • 1 large piping bag fitted with a star tip
  • 1 small jar of Maraschino Cherries with stems for toppings

Chocolate Ganache Ingredients:

  • 1 C semi sweet chocolate chips
  • 1/2 C heavy whipping cream
  • 1 large squeeze bottle

Instructions

Cherry Cola Cake Directions:
