This amazing banana bread recipe took the internet by storm when it went viral in 2017 and for good reason! Chrissy spent a long time perfecting this recipe and it truly is a masterpiece. The bread itself is tender, moist, and flavourful, the shredded coconut and dark chocolate add a delicious twist, and the texture added by cooking this bread in a bundt pan is unmatched.

Make it in a loaf pan – Although the bundt pan makes this bread tender and moist, this recipe can also be split between two standard loaf pans, or even made into muffins. Be sure to adjust the baking times for the smaller containers and check frequently to see if it’s done.

Tips for Making Perfect Banana Bread
- Do not use an electric mixer – mix this recipe by hand and be gentle when folding in the dry ingredients as well as the chocolate and coconut. You want to keep the batter light and airy for the best possible banana bread.
- You want VERY ripe bananas for this recipe. To ripen bananas quickly place them in a brown paper bag and fold the top closed. Add a ripe slice of apple to the bag to encourage further ripening.
- Use a test stick or a toothpick to check when the center of the bread is cooked. Bundt cakes take a long time to cook so don’t be surprised if the top starts to brown early.
- If the top is getting too dark then your pan is too close to the top of the oven and you need to lower your oven racks.
- Make sure you grease the bundt pan liberally and dust it with an even coating of flour to prevent sticking.
- Don’t try to pull the bread out too early or it will break apart. Let it cool on a baking rack for at least 10 minutes before carefully releasing the side with a knife or spatula and then carefully flip the pan over onto a plate and let the bread fall onto the plate.
Best way to Store Banana Bread
Store leftover banana bread sealed tight to keep it moist and tender. At room temperature, this should last for 4-5 days. For longer storage consider placing the bread in the fridge for 7-10 days or freezing the bread tightly wrapped to prevent freezer burn for up to 3 months.
Let the bread cool completely before placing it in an airtight container. To thaw banana bread, place it on the counter for several hours until soft.
Reheating Instructions
If you prefer to serve banana bread warm you can heat slices of bread in a 300°F oven for 5 minutes until warmed through or in the microwave for 10 seconds.

Ingredients
- 2 cups mashed bananas, 6 very ripe bananas
- 2/3 cups canola oil
- 4 eggs
- 2 cups all-purpose flour, and extra to dust pan with
- 2 cups white sugar
- 1 box vanilla instant-pudding mix
- 1 teaspoon baking soda
- 1 1/2 teaspoons kosher salt
- 1 cup unsweetened shredded coconut
- 1 3.5 oz bar dark chocolate, chopped into chunks
- Salted butter, for serving

Instructions
- Preheat the oven to 325°F.
- Add the mashed banana, eggs, and oil to a large bowl and combine well. In a separate bowl add the flour, sugar, pudding mix, baking soda, and salt. Combine well.
- Gently fold the dry ingredients into the wet ingredients and combine until just mixed. Once mixed gently fold in the chocolate and coconut. Avoid overmixing, and do not use an electric mixer.
- Use butter to generously grease a large bundt pan and dust with flour until it’s fully coated.
- Pour the batter into the bundt pan, it should fill about 3/4 of the pan.
- Bake at 325°F for 55-60 minutes until a toothpick inserted into the center of the bread pulls out clean. Remove the pan from the oven and let it cool for 10 minutes before using a spatula to gently release the bread from the sides of the pan. Flip the pan onto a plate to remove the bread.
- Let the cake cool before cutting into slices and serving with butter.
