How do you keep schnitzels crispy?
The biggest key to keeping schnitzels crispy is to use plenty of hot oil when you are cooking the meat. Don’t add the chicken to the oil until it is hot.
How is chicken schnitzel different from fried chicken?
When you make chicken schnitzel you have to pound the chicken flat before you prepare it. With fried chicken, you do not do this. Also, fried chicken is coated in flour, while schnitzel is coated in bread crumbs.
Why is my chicken schnitzel soggy?
The coating on the chicken schnitzel will get soggy if the oil is not hot enough before you add the chicken to it. The oil should be sizzling when you drop the chicken pieces in it.
Is it better to cook schnitzel in butter or oil?
Oil is the best choice for cooking this dish. Butter will scorch before you get the chicken fully cooked.
How to serve Crispy Chicken Schnitzel?
You can serve this dish with knives and forks, or cut it into smaller pieces to serve as finger foods. If you choose to cut it up, it is great atop rice, salad, or pasta.
Tips:
- Do not add the chicken to the oil until the oil is very hot. This will keep the coating from becoming soggy with grease.
- Pay attention to the underside of the chicken as you are cooking it. When you begin to see golden brown color on the coating around the edges, you can flip the chicken with tongs. Don’t flip it too early or you risk the breading sticking to the pan.
Variations:
- Cut the chicken breasts into smaller bites to make chicken nuggets or chicken strips.
- If you have really picky kids and you need a very mildly flavored dish, you can omit the Dijon mustard.
- For an Italian twist, leave out the Dijon mustard and use Italian-seasoned bread crumbs.
Ingredients for Crispy Chicken Schnitzel:
- Eggs
- Honey
- Dijon Mustard
- Soy Sauce
- Garlic
- Bread crumbs
- Salt
- Black Pepper
- Vegetable oil for frying
- Boneless Chicken Breast Halves
How to make Crispy Chicken Schnitzel:
Step 1. In a medium bowl, add the eggs, Dijon mustard, honey, soy sauce, and garlic.
Then, whisk everything together.
Step 2. Heat 1/2 to 1 inch of vegetable oil in a large skillet.
Step 3. Add bread crumbs, salt, and pepper and mix together in a shallow/large bowl.
Step 4. Put chicken breasts in the egg mixture first and knead until fully coated. Then, press the chicken pieces in the bread crumbs until evenly coated. Make sure to press hard to cover all the chicken.
Step 5. Carefully and slowly place chicken in the hot oil using tongs and cook until golden brown.
Step 6. Place the fried chicken on a plate lined with paper towels to drain excess oil.
Step 7. Serve with mashed potatoes or our Glazed Carrots and enjoy!

- 3 tbsp Honey
- 3 tbsp Dijon Mustard
- 2 ½ tbsp Soy Sauce

- 3 cups Bread crumbs
- 1 tsp Salt
- 1 tsp Black Pepper, Cracked
- Vegetable oil for frying
