How to Make It

Seeding the cucumber before assembling the rest of the sandwich makes space for the sandwich fillings.

Keep in mind that this healthy cucumber subs version is best served fresh, so make the sandwich as close to the time of the meal as you can. You may even consider bringing the ingredients to your workplace (if it’s your office lunch) and assembling the ingredients right there.

Tips for Success

Unlike regular sandwiches with bread, cucumbers will not absorb sauce or mayo very well. Avoid putting too much sauce on your sub, or it may slide around and become messy.

Slice tomatoes for your subs very thin – these sandwiches are already naturally thick.

Storage & Reheating

If you have sandwiches leftover, they can be placed in an airtight container and stored in the refrigerator. They will last for 3 days. The Cucumber subs can also be frozen if they are wrapped tightly. Thaw them in the refrigerator overnight before serving. To make these in advance, prepare as desired, wrap and store in the refrigerator. Keep in mind that freezing cucumber subs may change the texture.

Serving Suggestions

These subs can be topped with your favorite toppings. These should be made with the same types of meats and cheese you would use on a normal sub.
