- Shredded lettuce
- Slices of cheese of your choosing

How to make Cucumber Subs?
Step 1. Cut the cucumbers in half lengthwise. Deseed the cucumbers.
Then cut in half again the other way, so that each cucumber half created two slices of “bread” for each sandwich.
Step 2. In one-half of the cucumber slices, spread a layer of mayonnaise or hummus, depending on what you have chosen to use.
Step 3. Top that half with tomatoes, lettuce, a slice of cheese cut in half, and ¼ of the lunch meat.
Step 4. Roll up the remaining slices of meat, and layer them on the second halves of the cucumber slices.
Step 5. Place those slices onto the others to form 4 cucumber subs total.
