Step 3. Top that half with tomatoes, lettuce, a slice of cheese cut in half, and ¼ of the lunch meat.

Step 4. Roll up the remaining slices of meat, and layer them on the second halves of the cucumber slices.

Step 5. Place those slices onto the others to form 4 cucumber subs total.

Tips for Success
Unlike regular sandwiches with bread, cucumbers will not absorb sauce or mayo very well. Avoid putting too much sauce on your sub, or it may slide around and become messy.
Slice tomatoes for your subs very thin – these sandwiches are already naturally thick.
Storage & Reheating
If you have sandwiches leftover, they can be placed in an airtight container and stored in the refrigerator. They will last for 3 days.
