Moist Delicious Meatloaf
My husband loves when I make this meatloaf because he gets to eat it hot from the oven one day and in a meatloaf sandwich with swiss cheese the next. I used to hate meatloaf, I thought it was dry, tasteless, brick of a dinner. That was until I found this recipe!
The worst thing that you can do when making meatloaf is baking it too long. During the last 15 minutes of baking, I watch the internal temperature of the meatloaf very carefully, as soon as it registers 160 degrees F on the meat thermometer I take it out of the oven.
Can I use ground turkey or pork for this meatloaf recipe?
Can I turn this into a mini meatloaf recipe?
It is easy to turn this into a mini meatloaf recipe. The first thing you want to do is spray the muffin tin or mini meatloaf pans with cooking spray. When you make the meatloaf mixture you will then fill in the muffin tins or your other containers.
The cooking time does change depending on what size you are using. You want to make sure that the meatloaves reach the right internal temperature.
How to cook meatloaf so it drains the excess grease
No one likes a greasy, soggy meatloaf. However, unless you are buying ground beef that is 95/5 or 90/10, the grease is inevitable. There are special meatloaf pans that have a small grate at the bottom that raises the meatloaf giving a space for the grease to settle on the bottom of the pan. You can also tilt the pan and drain the grease out, but this is hard because it is hot. A third option is to use a baster to suck the grease out. I have heard some people put slices of bread on the bottom of the pan. The bread sucks up the grease. When baking is done, just throw the bread away.
