We love it for its healthy quotient, but more than that, we love it for how darn good this skinny meatloaf tastes! Plus, it looks beautiful too. The shiny, ruby-red ketchup glaze and the golden-brown top give it a yummy treat look. In my house, meatloaf is a holiday favorite. We also enjoy some on regular days to change our dinner routine.

Can I Use Another Type of Ground Meat?

Yes, absolutely! This recipe is so versatile that you can use any ground meat. I love beef because it is so juicy and flavorful. But turkey is just as beautiful and yummy. The cooking time will change depending on the meat you choose.

Can I Freeze Meatloaf?

Absolutely! Meatloaf is made for freezing. It’s so good in the freezer you’d want to make a large batch and save half for later. Every. Single. Time.

To freeze, tightly wrap in plastic wrap, making sure that all the air is out. You can also slide individual pieces into freezer-safe bags. It’ll be easier to pull one out later. Your meatloaf will remain good for three months in there. Thaw it in the refrigerator for a minimum of 8 hours before reheating.

What Can I Serve with Skinny Meatloaf?

My family and I can’t imagine meatloaf without a side of creamy mashed potatoes. And when I’m feeling too carb-conscious, I do some roasted veggies. You can also serve the meatloaf with fresh salads or a hot bowl of hearty soup.

  • Yellow Mustard
  • Brown Sugar

  • Vaidila Onion
  • Egg Whites
  • Pinch Salt
  • Pepper
  • Ketchup

  • Worcestershire Sauce

How to make Skinny Meatloaf:

Step 1. Preheat oven to 350 degrees.

Step 3. Combine the ground beef, shredded bread, onion, egg whites, salt, and pepper together in a large bowl. Set aside.

What Variations Can I Make?

I rate this recipe five stars on versatility. I’ve made quite a few tweaks over the years, and they all taste great.

  • Switch up the sauces- swap ketchup with barbecue sauce, mustard with dijon, or Worcestershire sauce with soy sauce
  • Substitute the tenderloin with turkey, chicken, pork, or a combination.
  • Mix some parmesan with the bread crumbs for a cheesy twist.
  • Swap the yellow onion for sweet onions.
  • Add some more heat to the mix by adding some chopped jalapeno peppers.
  • Top the loaf with some strips of bacon for an extra crunch.
  • Use oats instead of breadcrumbs for the coating.

Tips and Tricks

I’ve tried this recipe a few times until I thought I’d perfected it (lemme know what you think about it). So, I think I have some tips that can change the game for you.

  • Don’t overwork the beef. It’ll make it tough.
  • Cook the onion and garlic before mixing them with the beef. It will help bring out the flavor of these ingredients.
  • You can cut down on cooking time if you cut the loaf into four sections or make it in cupcake tins.
  • You can make it juicier if you use 93% lean beef instead of 96%.
