When I was a little girl, my auntie used to make the most delicious Hawaiian wedding cakes, I’ve decided to start making my own Hawaiian wedding cakes. My first attempt was a total disaster, but I’m getting better every time.
My latest cake turned out just like my auntie’s – moist and flavorful with a perfect crumb.

Gluten-Free Hawaiian Wedding Cake
This Hawaiian wedding cake is actually a great gluten-free cake recipe to try out if you have dietary restrictions, but are still craving a delicious sweet treat.

Ingredients:
For the cake:
- All-purpose flour
- Granulated sugar
- Brown sugar
- Eggs
- Baking powder
- Crushed pineapple
- Chopped walnuts
- Shredded coconut
- Cinnamon
- Pinch nutmeg
- Vanilla extract
For the icing:
- Heavy whipping cream
- Cream cheese softened
- Granulated sugar
- Vanilla extract
- Toasted shredded coconut
How to make Hawaiian Wedding Cake:
Preheat the oven to 350 degrees.
Making the cake:
Step 1. In a mixing bowl, add 2 cups of all-purpose flour and 1 cup of granulated sugar

Step 2. Add ½ cup of brown sugar and 1 tsp of baking powder.

Step 3. Add 1 can of crushed pineapple.

Step 4. Add 1 cup of chopped walnuts.

Step 5. Add 1 cup of shredded coconut.

Step 6. Add 1 tsp cinnamon.

Step 7. Finally, add a pinch of nutmeg and 1 tsp. Vanilla extract
Step 8. Beat together until completely combined.
Step 9. Pour the batter into a well-greased 9×13 baking dish.
Step 10. Bake for 30-40 minutes, or until browned and cooked completely through.
Step 11. Let the cake cool completely.
Making the icing:
Step 1. When ready, beat the heavy whipping cream in a mixing bowl until it forms stiff peaks, and set aside.

Step 2. Add the rest of the ingredients for the icing to a mixing bowl, and beat until smooth and creamy.

Step 3. Fold the heavy whipping cream into the icing mixture until combined.
Step 4. Spread the icing on the cake in an even layer, and top with the toasted coconut flakes.

For the icing:
- 1 ½ C. Heavy whipping cream
- 8 oz. Cream cheese softened
- 1 C. Granulated sugar
- 1 tsp. Vanilla extract
- Toasted shredded coconut

Instructions
