Easy and Delicious Instant Pot Chicken

This chicken recipe is so good, you’ll be addicted, hence the name of crack chicken. I have taken the flavors of the chicken crack dip, which many people use as a meal anyway, and turned it into a more filling dinner idea that you can make in the Instant Pot.
Believe me, once you have it, you are going to want it again and again and again.

Crack chicken dip is a delicious chicken recipe that is made from shredded chicken, cream cheese and seasonings.
It tastes incredible. Many people following a keto or low carb way of eating like this recipe because it is tasty and filled with the macros they are looking for. While it is often considered higher in fat, people following a calorie based diet might stay away from it, but that doesn’t have to be the case. The shredded chicken can still be a great tasting, low-calorie meal when made the correct way.
No matter what eating plan you are following, you want to have this crack chicken dip.

When it comes to making this crack chicken, many people want to know that the seasoning is that makes crack chicken so good. It is truly just one simple ingredient that takes this from a boring chicken recipe to OMG- Amazing. It is cream cheese. Even people who do not love cream cheese tend to love this recipe. The cream cheese combines with the chicken broth to create a sauce that the chicken just soaks up. While traditional crack chicken is a shredded chicken, this recipe, that is more of a meal, is diced chicken breast. Thanks to the Instant Pot, this chicken gets the flavor of the sauce deep inside and makes it out of this world.
In addition to the cream cheese, the other flavor in this chicken it the Ranch flavor packet. The same time of ranch you would use to make your own homemade ranch dressing is added to this broth to give it an amazing flavor.
Variations to Crack Chicken Recipe
So like I said, there are ways to make this crack chick recipe a great option no matter what meal plan you are following. For example:
- Want this to be low Carb: If you want this recipe to be low carb or keto friendly, you will want to avoid the noodles. You can make it without the noodles, much like crack chicken dip or you can serve it with zoodles to create a similar recipe. I have also seen low carb noodles which would work well if you really want to have this crack chicken recipe the way it is.
- Want to Make this Low Calorie: Since this recipe has a cream cheese style sauce, you might think that you can not have it if you are watching your fat and calories. That couldn’t be further from the truth. You will want to swap out the full fat cream cheese for fat free. This drops a significant amount of fat and calories but still gives the great creamy taste that this recipe needs. This simple swap is enough to make this a much more diet-friendly recipe.
Ingredients in Instant Pot Crack Chicken
- Boneless skinless chicken breasts
- Olive oil
- bacon
- Onion
- Ranch seasoning mix
- Cream cheese
- Chicken broth
- Egg noodles
- Frozen peas
How to Make Instant Pot Crack Chicken
Set the Instant Pot to the saute function, and add in the olive oil and bacon. Cook the bacon until it begins to become crispy.
Once the bacon is almost done, add in the chicken and the onion. Saute until the chicken is no longer pink on the outside.
Turn off the saute function, and sprinkle the ranch seasoning over the chicken. Stir to combine.
Slice the cream cheese, and layer it over the top of the chicken.
Pour in ½ cup of the chicken broth.
Place the lid on the Instant Pot, making sure the release valve is turned to the sealing position. Set the Instant Pot to cook on high manually for 5 minutes. Perform a quick release when the cook time is over, and open the lid once the pressure has released.
Add in the other 1 ½ cups of chicken broth as well as the egg noodles and frozen peas, and then stir to combine the cream cheese and ingredients together well.
Place the lid back onto the Instant Pot, once again making sure the release valve is set to the sealing position.
Cook the ingredients on the manual setting for another 3 minutes. Perform another quick release at the end of this cooking time. Remove the lid, and stir the ingredients together well. You can saute the ingredients for a few more minutes if you would like to thicken the sauce a bit.
