Moist Pumpkin Bread

This bread is so moist and delicious it will make you feel like you are cheating on your low-carb diet, but you are not.
Absolutely foolproof and easy to make.
Moist bread with a spicy glaze drizzled over top, this is an amazing dessert bread.

Cook Time: 1 hour 15 minutes
Servings: 20
Ingredients:
3 ½ C. All-purpose flour
⅔ C. Granulated sugar
2 C. Packed brown sugar
1 C. Vegetable oil
2 C. Pumpkin puree
2 tsp. Baking soda
⅔ C. Coconut milk
1 tsp. Nutmeg
1 tsp. Salt
1 ½ tsp. Cinnamon
1 C. Chopped walnuts
⅔ C. Coconut flakes
How to make Moist Pumpkin Bread:
Step 1. Preheat the oven to 350 degrees.
Step 2. Mix together all of the ingredients except for the walnuts and coconut in a mixing bowl until well combined.

Step 3. Fold in the walnuts and coconut flakes.

Step 4. Pour the batter evenly into two well-greased loaf pans.
Step 5. Bake for 1 hour and 15 minutes.
Step 6. Cover with tin foil immediately after removing from the oven for 10 minutes, then remove and let cool to room temperature before serving.
