Easy Pumpkin Bread Recipe

Moist and spicy Pumpkin Bread spiced with cinnamon, nutmeg, ginger, cloves, and pumpkin spice then drizzled with a spiced glaze. I had some spiced glaze leftover from the pumpkin scones that I made this weekend and decided to drizzle it on top of this delicious bread. It was the perfect addition. When my husband took the first bite of this bread he exclaimed, “this is the best bread ever!” I have to agree, I now have a new favorite quick bread. I will definitely be making this, again and again, this fall!

Can I Freeze Pumpkin Bread?

Whether you want to make a double batch of this pumpkin bread or have extras that will not be eaten before it goes bad, you can freeze this pumpkin bread. Once the bread has cooled and the glaze is set, you can wrap the bread as a whole in plastic wrap or you can slice it into individual pieces and wrap each one in plastic wrap. This lets you take out a few slices or however many you want at a time. You do not have to worry about taking the entire loaf out of the freezer.

Can I Make These Pumpkin Spice Muffins

If you want to make these pumpkin spice muffins instead of bread, you can make easily change this recipe. Once the batter is made, add muffin liners to a muffin pan and then fill each one 2/3 of the way full. You will bake the muffins for about minutes. You will want to keep an eye on the doneness and make sure not to over bake the muffins. Once the muffins are cooled you can drizzle the spicy glaze over the muffins.

How to Store Pumpkin Bread

When you have fresh pumpkin bread you want to store it properly to help it last as long as possible. You want to store the bread at room temperature in an airtight container, wrapped well in plastic wrap or in a freezer bag. This will protect the bread from air which will make it go stale faster. While the bread can be stored in the refrigerator, the bread will taste dried out sooner when stored in the refrigerator.

Ingredients for Easy Pumpkin Bread

  • Pumpkin puree
  • Eggs
  • Vegetable oil
  • Butter
  • Water
  • Brown sugar
  • White sugar
  • Vanilla extract
  • All-purpose flour
  • Baking soda
  • Salt
  • Ground cinnamon
  • Ground nutmeg
  • Ground cloves
  • Ground ginger
  • Pumpkin spice
  • Walnuts
  • Powdered sugar
  • Milk

How to Make Pumpkin Bread Recipe

Preheat oven to 350 degrees F. Grease and flour two 9×5 inch loaf pans.

In a large bowl, mix together pumpkin puree, eggs, oil, butter, water, sugars and vanilla until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, ginger, pumpkin spice and walnuts. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

Bake in preheated oven 45-50 minutes or until toothpick inserted into the center comes out clean.

While the pumpkin bread is cooling, combine all of the ingredients for the spiced glaze. Drizzle over bread and allow the icing to dry before serving (about an hour).

Ingredients 

For the Pumpkin Bread:

  • 1 15 ounce can pumpkin puree
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup butter, melted
  • 2/3 cup water
  • 1 cup brown sugar
  • 2 cups white sugar
  • 1 teaspoon vanilla extract
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon pumpkin spice
  • 1 cup walnuts, optional

For the Spiced Glaze:

  • 1 cup plus 3 tablespoons powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 pinch ground ginger
  • 1 pinch ground cloves
