- Onion, diced
- Chicken breasts
- Dry penne pasta
- Marinara sauce
- Chicken broth
- Dried oregano
- Parmesan cheese
- Mozzarella cheese, shredded
- Salt and pepper (for seasoning)
How to make One Pot Chicken Parmesan Pasta:
Step 1. Heat olive oil in a large skillet over medium-high heat. Saute onions until they start to turn translucent, about 2-3 minutes.
Step 2. Season chicken with salt and pepper and add to the skillet. Brown chicken until mostly cooked through, about 4-5 minutes. Add garlic and saute until fragrant, about 1 minute.
Step 3. Add dry pasta, marinara sauce, chicken broth and oregano.
Stir until ingredients are well combined in the skillet. Cover the skillet and reduce to a simmer.
Cook for 25-30 minutes, stirring a few times until pasta is cooked and the liquid has reduced to a sauce consistency.
Step 4. Turn off the heat and stir in the parmesan and ½ a cup of mozzarella. Sprinkle remaining 1 cup of mozzarella over top and cover with skillet until cheese melts, around 3-4 minutes.
Step 5. Serve hot.
