What Ingredient Can Replace Tomatoes?

Although we have moved on from the tomato craze, we can’t forget the nice acidic flavor it adds to the salsa. So, when we replace tomatoes with something else, we should make sure that our substitute packs a similar acidic punch. For me, tomatillos and roasted bell pepper work great. How Do You Keep Peaches From Browning When Canning For Salsa?

You need ascorbic acid for the task. Yes, that’s Vitamin C. Squeeze some lemon juice or lime juice into the salsa. It will prevent oxidation and keep your peaches nice and pink. If you’re using the powdered form, mix a teaspoon in a gallon of water and drop your peaches in it.

Does Canning Salsa Need Vinegar?

Yes, you do. Lemon juice and citric acid work just fine too. The idea is to keep the acidity level high so the bacteria don’t consume your salsa before you do.

How to make Peach Salsa:

Step 1. Chop the peaches, onion, red bell pepper, and tomato, into small chunks and throw them into a bowl. Toss to combine.

  • 3 cups fresh Peaches, diced and seed removed
  • 1 whole Medium Red Onion, diced Very Fine
  • 2 Red Bell Peppers, seeded and diced
  • 2 Roma tomatoes, diced
  • 2 whole Jalapeños, seeded and minced
  • 1/2 bunch Cilantro, Chopped
  • 1/4 tsp. Chili Powder
  • Dash Of Salt
  • Juice Of 1 Lime
