Can I store this on the counter?

If you have a drink dispenser type of jar, you could leave this on the counter. You would have the added ice in the jar that will keep it cold. However, you could store the juice in the refrigerator to ensure that it stays chilled.

Is this drink a healthy drink?

Pineapple and lemon do help to detoxify your body. However with the added sugar, tha takes a good portion of the health away.

Can I substitute anything for the sparkling water?

You could use plain water, you could make it fun and add Sprite. You could stick with the sparkling water, which does not add much, if any flavor, to the drink.
