- Rotel canned tomatoes – a little more zip than a regular can of tomatoes. Adds a lot of flavor.
- Pork sausage (fresh or frozen) – remove the casings from your favorite sausage and add it to the pan! I like to use a spicy sausage like chorizo.

- Spicy Rotel dip – Use a spicy sausage like chorizo or hot Italian sausage for some extra heat. You can only add a can of chopped green chilies.
- Cream Cheese Rotel Dip – If you can’t find velveeta cheese, use a brick of cream cheese and some cheese whiz instead!
- Vegetarian Rotel Dip – Trade out the sausage for sauteed onion, peppers, or your favorite veggie meat.
- Taco meat Rotel Dip – Instead of pork sausage, you can use taco ground beef for a meaty variation on this recipe.
How to adjust the spice factor of this dip?
If you would like to reduce the heat of this dip, use a can of standard diced tomatoes instead. For a hotter dip, add canned green chilies, chopped jalapeno, or ancho chili powder.

How to store dip?
Let the dip cool completely before storage. Store leftover dip in an airtight container and place in the fridge for up to 3 days.
This dip can also be frozen for up to 3 months! Thaw frozen dip in the fridge. Over heat on the stove in a saucepan, or in the crock pot for a quick thaw and serve as a party appetizer.

Depending on which sausage you used, there could be a layer of fat that settles to the top of the dip. You can either stir it in, or if you don’t want that drain the cooked sausage completely before adding the cheese.

If the dip cooks too long and is too thick, add a splash of cream to the pot and stir until smooth.

Instructions
- Brown the pork sausage in a skillet over medium heat until fully cooked.
