Shrimp Kabob Ingredients
There are a number of different vegetables you can use for this recipe. For this simple version you will need the following ingredients.
- Shrimp, peeled and deveined – You can leave the tails on or off but make sure you remove the shell and clean the shrimp properly.
- Zucchini – Green or yellow summer squash can be used, slice it small enough so it grills in time.
- Lemon – The grilled lemon has a unique flavor that imparts the veggies and shrimp as it cooks.
- Red pepper – Red, yellow, green, doesn’t matter, use what you like. The char on the pepper is so delicious.
- Red onion – The extra bite from the red onion is perfect with the sweet peppers and grilled shrimp.
- Shrimp Marinade – Homemade or store bought marinades/seasonings can both be used.

Shrimp Kabob Tips

To prevent wood skewers from burning on the grill, soak them in water before assembly and try to keep the exposed ends away from direct flame.
How to peel and clean shrimp?
Then properly peel and clean shrimp. Run a sharp knife along the dark line on the back of the shrimp, open the shell and scrape the dark bits out of the shrimp and discard. Use the slit to peel off the shell and then pinch the head and tail off the shrimp.
Can you cook frozen shrimp in shrimp kabobs?
If you want to use frozen shrimp, allow the shrimp to thaw before assembly.

Instructions
- Combine the shrimp, zucchini, onion, red pepper, and lemon in a large bowl. Add the shrimp marinade and toss to coat. Allow the shrimp and veggies to marinade for at least 30 minutes.
- Soak wooden skewers in water for 10 minutes then thread the skewers with the vegetables and shrimp in only order you like.
- Heat the grill to medium high. Once hot add the skewers to the grill and cook for 2-3 minutes per side until the shrimp is cooked and the vegetables are tender.
