About This Recipe

Think of this recipe as more of a formula. You can follow it exactly or add your own spices, veggies, and seasonings and make it your own. Zucchini, red pepper, lemon, and red onion, tossed with perfectly seasoned shrimp and skewered before being grilled. This simple dinner recipe cooks fast and is full of robust smoky flavors.

Shrimp Kabob Ingredients

There are a number of different vegetables you can use for this recipe. For this simple version you will need the following ingredients.

  • Shrimp, peeled and deveined – You can leave the tails on or off but make sure you remove the shell and clean the shrimp properly.
  • Zucchini – Green or yellow summer squash can be used, slice it small enough so it grills in time.
  • Lemon – The grilled lemon has a unique flavor that imparts the veggies and shrimp as it cooks.
  • Red pepper – Red, yellow, green, doesn’t matter, use what you like. The char on the pepper is so delicious.
  • Red onion – The extra bite from the red onion is perfect with the sweet peppers and grilled shrimp.
  • Shrimp Marinade – Homemade or store bought marinades/seasonings can both be used.

The best way to add variety to this recipe is to change the vegetables and spices used.

Here are some great ways to add extra flavor to these kabobs:

  • Kick up the heat: adding some chipotle or cayenne to the marinade will increase the spice level for a nice kick of heat. You can also add jalapeno, banana peppers, or scotch bonnets to the kabob.
  • Cheesy Shrimp Kabob: Add some grill worthy cheese cubes to the skewers like halloumi.
  • Change the meat: This same recipe can be used to make chicken, beef, pork, and even seafood kabob. You may need to adjust the cooking time for different meat.

Shrimp Kabob Tips

  • Let the mixture marinate for at least 30 minutes to impart as much flavor as possible. You can even make this ahead of time seal the mixture in the fridge overnight. Simply skewer a grill before serving.
  • Be careful not to overcook the shrimp or it will become rubbery.
  • If you are adding different vegetables try to pick ones that will cook at the same rate as the shrimp. 
  • If you’re using wooden skewers, soak them in water for 10 to 20 minutes before assembling the kabobs. This will keep them from burning while you grill.

Storage Tips

Allow leftover kabobs to cool to room temperature before storage. Place in an airtight container and keep in the fridge for up to 4 days.

Reheat on the grill, in the microwave, or in a hot oven until warmed through.

If you are making the recipe ahead of time for a party or BBQ, place the uncooked kabobs, covered in the fridge to marinade overnight and grill before serving.

What type of skewers do you need?

Make sure you are using metal or wooden grill safe skewers. Do not use any plastic or anything that will melt and ruin your dinner.

Why do wood skewers burn up on the grill?

To prevent wood skewers from burning on the grill, soak them in water before assembly and try to keep the exposed ends away from direct flame.

How to peel and clean shrimp?

Then properly peel and clean shrimp. Run a sharp knife along the dark line on the back of the shrimp, open the shell and scrape the dark bits out of the shrimp and discard. Use the slit to peel off the shell and then pinch the head and tail off the shrimp.  

Can you cook frozen shrimp in shrimp kabobs?

If you want to use frozen shrimp, allow the shrimp to thaw before assembly.

  • 1 pound Shrimp
  • 1 zucchini sliced
  • 1 red onion sliced
  • 1 red bell pepper sliced
  • 1 lemon sliced
  • 1 shrimp marinade

Instructions

  • Combine the shrimp, zucchini, onion, red pepper, and lemon in a large bowl. Add the shrimp marinade and toss to coat. Allow the shrimp and veggies to marinade for at least 30 minutes.
  • Soak wooden skewers in water for 10 minutes then thread the skewers with the vegetables and shrimp in only order you like.
  • Heat the grill to medium high. Once hot add the skewers to the grill and cook for 2-3 minutes per side until the shrimp is cooked and the vegetables are tender.
  • Enjoy!
