What Type of Pasta Should I Use in Sicilian Chicken Soup?
I love using small pasta for this recipe. Tiny shells, macaroni, or even alphabet-shaped pasta. It’s fun, and it cooks quickly too! If you’re using longer pasta like penne or fusilli, make sure to break it into smaller pieces.
What Can I Serve With Sicilian Chicken Soup?
We like it as it is. With pasta and veggies, it’s more than enough to keep us happy. Yea, simple (or call us lazy) people.
But when I serve it to guests, I make sure I add a few side wows. My go-to’s are cheesy garlic bread, green salad with a lemon vinaigrette, and freshly baked focaccia.
Ingredients:
- Shredded rotisserie chicken
- Yellow onion
- Celery
- Baby carrots
- Red bell peppers
- White potatoes
- Diced roasted tomatoes
- Chopped fresh parsley
- Minced garlic
- Salt
- Ground black pepper
- Pasta
How to make Sicilian Chicken Soup:
Step 1. Add the chicken, vegetables, tomatoes, about 8 cups of water, parsley, minced garlic, salt, and pepper in a crockpot.
Add the ingredients to the crockpot.
Then, add the water.
Lastly, add the chicken.
Step 2. Cover and cook on LOW for 4 hours.
Step 3. Prepare the cooked pasta according to package instructions.
Step 4. Add the cooked pasta to the slow cooker and stir. Enjoy!

No problem, I’ve gotcha. If you want a thicker soup, cornstarch can help.
