No, I did not add water to the bottom of the baking pan. I just formed it in a 9×13 pan and then baked it. The oil and fat will spread out as it bakes, instead of when you cook in a loaf pan the oil rises to the top.

What can I use as a binder in meatloaf instead of breadcrumbs?

If you do not want to use breadcrumbs you can use crushed saltine crackers or oatmeal. Both will act as a binder but also help add flavor to your meatloaf as well.

Feel free to try it out and see which ingredient you prefer better.

What can I use to hold meatloaf together?

The egg and breadcrumbs are what will keep the meatloaf together. I find it works great at holding the meat mixture together as it bakes, but also adds moisture so you don’t end up with a dry meatloaf.

  • Don’t overwork the meat or it will make your meatloaf dense.
  • Make sure to not overbake, or it will dry out the meatloaf.
  • Use any flavor of bbq sauce you like for flavoring the meatloaf.

Variations

  • Use half ground beef and half ground pork.
  • Swap breadcrumbs out with oatmeal or saltine crackers that are crushed.
  • Don’t add peas if you don’t want veggies.
  • Add in 1/4 cup diced bell pepper.
  • Top with ketchup in replace of bbq sauce for a traditional flavor.
  • Mashed potatoes are optional.

  • Onion (Chopped)
  • Olive Oil
  • Frozen Peas
  • Breadcrumbs
  • Garlic (Minced)
  • Beef (Ground)
  • Large Egg
  • Tomato Sauce
  • Parsley (Chopped)
  • BBQ Sauce
  • Salt And Pepper To Taste

  • Potatoes Peeled And Cubed
  • Heavy Whipping Cream
  • Butter
  • Salt And Pepper To Taste
  • Cheddar Cheese (Shredded)

How to make this Meatloaf with Mashed Potatoes and Cheese:

Step 1. Heat the oven to 400 degrees.

Step 2. In a skillet over medium heat, cook 1 chopped onion, and 3 tsp of garlic in 1 tbsp of oil until softened. Remove and let cool.
