This is a great way to switch up Mexican Night or to make a favorite dish a little healthier. This is a dish that is super easy to make and can be ready in roughly one-half hour. This means all those family members screaming because they are starving will not be waiting very long for the food!
When you stuff the Tomatoes with a zesty seasoned Ground Beef and add in cheese, not only do you have a delicious dish, it is healthy and makes them all happy.

The juicy tomatoes also add a slight crunch so you have various textures that will delight your taste buds. No need to have the dish look like there is not much there. You can serve each Taco Stuffed Tomato on a bed of lettuce and then top with your favorite Taco toppings.

Are there variations I can use?
You could slice the tomatoes in half and use them as Taco Boats. You could use Chicken or Sausage instead of Ground Beef. You could use a different blend of Cheese to top them.

Ingredients:
- Large tomatoes
- Ground beef
- Taco seasoning
- Spinach raw
- Corn
- Cheddar cheese shredded
- Parsley for garnish
How to make Taco stuffed tomatoes:
Step 1. Preheat the oven to 375 degrees.
Step 2. Add the ground beef and onions to a skillet over medium-high heat on the stove. Saute until the onions have softened and the beef is completely browned. Drain any remaining grease.

Step 3. Mix in the taco seasoning and the corn.

Then, add the spinach.

Mix until the spinach has completely melted.

Step 4. Slice the top of the tomatoes off, remove the center of the tomato and spoon out the inside.

Step 5. Fill the tomatoes with the taco mixture and sprinkle with the cheese on top.
Step 6. Bake for 15 minutes.
Step 7. Garnish with chopped parsley and serve. Enjoy!
