Mississippi cake has been a wonderful potluck cake recipe that I’ve been using for years. I grew up eating Mississippi cake for pretty much every occasion and holiday. It was something that my grandma always made, and we could expect that it was going to be served pretty much anytime our family got together. With intense chocolate, chocolate frosting, and marshmallows, what could go wrong? As an adult, I’m more than happy to make this Mississippi cake for pretty much any occasion imaginable. I love carrying on the tradition, and everybody has begun to expect it from me.
Sometimes I will make a cake if we have a friend that just had a baby or somebody different moves into the neighborhood. Whenever you bring this cake as a gift, it’s impossible for the recipient not to have a smile on their face. So if you want to give someone special, make them a Mississippi mud cake.
What Size Pan To Use
You will need a 9 by 13-inch baking pan for this cake. You could also make it into cupcakes if you wanted to. If you decide to make cupcakes, the baking time is going to be more like 15 to 20 minutes instead. For cupcakes, you will need to follow the rest of the directions the same.
Can I Double This Recipe
Yes, you can double this Mississippi mud cake recipe. You will need multiple 9 by 13-inch baking pans depending on how many cakes you’re going to make. Or, if you have access to a very, very large baking pan, you could use that instead. If you do that, you will have to keep an eye on the baking time because I’ve never made it that way, so I don’t know how long it will take.
Best Way To Store Cake
The best way to store this Mississippi mud cake is by keeping it at room temperature. It will last up to four days at room temperature. You could refrigerate it if you wanted you, but the marshmallows don’t always do so well in the fridge.
Does Mississippi Mud Cake Freeze Well
Yes, you might be surprised to know that you can freeze Mississippi mud cake. After the cake has cooled, you can cover it with plastic wrap then place it in a different freezer-safe container. The cake will last in the freezer for two to three months. To serve it; you can place it in the refrigerator overnight or put it on the countertop until it is defrosted. If you want it to be melty, you can even microwave it for 15 to 20 seconds after it’s defrosted.

You’ll just need about 10 ingredients to whip up one of these Mississippi cakes. The flavor of the Southern cake is mind-blowing good, and it’s fantastic that you only need a few items to make it happen. What’s take a look at what you need so you can head in the kitchen and whip up one of these cakes.
- 1 C unsalted butter softened
- ½ C Ghirardelli cocoa powder
- 2 C sugar
- 4 large eggs
- 1 ½ C flour
- ½ tsp kosher salt
- 1 C chopped walnuts
- 1 tsp pure vanilla extract
- 2 C marshmallows cut into quarters or 2 C mini marshmallows
- 1 – 16oz container of chocolate frosting
How to Make Mud Cake
This is one of my favorite cakes to make because it is so simple. There’s just a handful of steps and most of the time will be spent waiting on it to bake. I do need to warn you your house is going to smell phenomenal as it bakes. Take a look at what you need to do to make this Mississippi cake.
Step 1: Warm up the oven to 350 degrees and spray a 9×13 baking dish with non-stick baking spray.
Step 2: Melt the butter and cocoa powder together in increments of 45 seconds until completely melted in a microwavable safe bowl.
Step 3: Whisk together the sugar, vanilla, and eggs until combined in a large bowl.
Step 4: Carefully whisk in the chocolate-butter mixture until combined.
Step 5: Whisk together flour, salt and gradually whisk into the wet ingredients place medium bowl.
Step 6: Fold in the chopped walnuts and pour the cake batter into the baking pan.
Step 7: Bake the Mississippi mud cake in the oven for 35-45 minutes or until the toothpick comes out clean.
Step 8: As soon as the cake comes out of the oven, top with the marshmallows.
Step 9: Place back into the oven for 4 minutes so that the marshmallow starts to slightly melt.
Step 10: Place the cake onto the counter, too cool.
Step 11: Remove the foil from the chocolate frosting and place the container into the microwave for 45 seconds to melt the frosting.
Step 12: Pour the frosting over the marshmallows and smooth evenly.
Step 13: Allow the frosting to set for about an hour before serving!

- As soon as the cake comes out of the oven top with the marshmallows.
- Place back into the oven for 4 minutes so that the marshmallow starts to slightly melt
- Place the cake onto the counter.
- Remove the foil from the chocolate frosting and place the container into the microwave for 45 seconds to melt the frosting.
- Pour the frosting over the marshmallows and smooth evenly
- Allow the frosting to set for about an hour before serving!
