Ingredients:

1 Package Pepperidge Farms herbed stuffing mix

1 C. Butter unsalted

2 Cans Cream of chicken soup

1 C. Onion chopped

4 C. Shredded chicken

2 C. Frozen mixed vegetables

1 Can Evaporated milk

Ingredient Notes & Substitutions

  • Pepperidge Farms herbed stuffing: You can use Stovetop or another off-brand stuffing mix if you prefer! If you’re feeling creative, you can try to make your very own Thanksgiving stuffing (and if you have the time).
  • Frozen mixed vegetables: Feel free to make your own mix of canned veggies, especially if you have pickier eaters to tend to in your home. It will still be the best amazing chicken casserole recipe you’ve ever tried, guaranteed!
  • Chopped onion: If you don’t enjoy the texture of onion, you can swap it for onion salt or onion powder. I recommend onion powder as there’s plenty of salt in the remaining ingredients in this recipe.
  • Evaporated milk: Rice milk, soy milk, and even unflavored almond milk can be used as a dairy alternative or if you simply do not have evaporated milk available while making this recipe.
  • Shredded chicken: Make and shred your own chicken or opt for a rotisserie chicken. Rotisserie chicken is deliciously juicy and tender, making it a great choice if you want to shred your chicken without the hassle.

How to Make It

Step 1. Preheat the oven to 350 degrees. While your oven is preheating, you’ll spend time preparing the other ingredients for this casserole dish.

Step 2. Place the butter in a skillet over medium heat and cook until completely melted. Avoid burning the butter or allowing it to brown too much. If you notice the butter is browning, turn down the heat and remove the pan from the stove while the temperature is reduced.

Step 3. Pour the butter over the stuffing mix in a bowl and toss to coat.

Step 4. In a separate mixing bowl, combine the shredded chicken, soups, onion, evaporated milk, and mixed vegetables. Stir to combine.

Step 5. Place half of the stuffing into the bottom of a well-greased 9×13 baking dish.

Step 6. Add the chicken and soup mixture on top of the stuffing. Spread evenly so the ingredients are distributed among the entire casserole.

Step 7. Layer the remaining stuffing on top of the chicken mixture.

Step 8. Bake for 40 minutes. Garnish with freshly chopped parsley before serving if desired.

Tips for Success

Use a rotisserie chicken if you’re in a rush or if you have a hard time shredding traditional chicken breast. Rotisserie chicken is much more tender and juicier, making it easier to work with.

Ensure you’re using enough melted butter to cover the mixture, as this will add to the flavor and prevent the casserole from tasting too dry.

Storage & Reheating

Thankfully, you can store and save this amazing chicken casserole in your fridge or freezer. You can store the entire baking dish (with a lid) in your fridge for up to 3 days. Store individual servings in airtight containers with lids for 3 days as well.

It’s also possible to freeze this dish for up to 2 months. Just be sure to use proper  containers that are designed for freezing and long-term storage.

To reheat this amazing chicken casserole, you’ll want to remove the casserole servings from your refrigerator or freezer and allow them to come to room temperature. Reheat in your oven at 350 degrees for 10 to 15 minutes. You can also microwave individual servings of this simple amazing casserole meal for 2 to 3 minutes per serving.

Serving Suggestions

This casserole is super hearty, savory, and filling! Try serving it with Italian green beans or air fryer green beans for healthy side dishes.
