For this easy recipe all you need in some pantry staple ingredients, and chocolate chips!

  • All-purpose flour – Normal all purpose flour is perfectly acceptable for pancakes. If you want an extra delicate pancake try pastry or gluten free flour.
  • Baking powder
  • Salt
  • Sugar – white granulated sugar makes the fluffiest pancakes while brown sugar adds extra flavor, the choice is yours.
  • Milk – whole milk or even cream can be used. 2% or skim milk work as well but the flavor is not as rich.
  • Egg
  • Butter – unsalted butter is all you need for this recipe. If you are using salted butter be sure to adjust the amount of extra salt added.
  • Vanilla extract – If you have it, use real vanilla extract, the difference in flavour between real and artificial is night and day.
  • Chocolate chips – any kind you like! Dark, milk, semi-sweet, white chocolate, butterscotch chips, try them all!

Ingredients 

  • 1 1/2 cup all-purpose flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 2 Tbs sugar
  • 1 1/4 cup milk
  • 1 egg , beaten
  • 3 Tbs butter, melted
  • 1 tsp vanilla
  • 1 cup chocolate chips

Instructions

  • Whisk together the flour, baking powder, salt, and sugar in a large bowl. In another bowl add the milk, egg, melted butter, and vanilla and whisk to combine well.
  • Gently fold in the wet ingredients into the dry ingredients until just combined and then fold in the chocolate chips.
  • Scoop the batter into a hot skillet about ¼ cup at a time and cook for 2-3 minutes, until bubbles start to rise to the surface. Flip and cook the other side until golden brown. Stack on a paper towel lined plate to keep warm.
