Ingredients:
8 Gold potatoes shredded
½ C. Flour
3 large eggs
½ tsp. Garlic powder
Salt and pepper to taste
For the meat mixture:
½ lb. Ground beef
¼ C. Dried minced onion
1 large egg
¼ C. Bread crumbs
Salt and pepper to taste
How to make these Delicious Stuffed Pancakes:
Step 1. In a large mixing bowl, combine the shredded potato, 3 eggs, ½ cup flour, garlic powder, and salt and pepper to taste.

Step 2. In a smaller bowl, combine the ground beef, minced onion, egg, bread crumbs, and salt and pepper to taste. Knead until combined well.

Step 3. Heat about an inch or two of oil in a deep-sided skillet over medium-high heat on the stove.
Step 4. Place a layer of the potato in your hand, topped with a small amount of the filling, and then flatten another layer of potato on top of the filling. Form the mixture into a small round pancake, and drop it gently into the heated oil. Fry on each side until golden brown and cooked through.
Step 5. Remove from the oil and place on a paper towel-lined rack to drain and cool.
