What are Sheet Pan Pancakes?

Sheet pan pancakes are a simple and convenient way to make a whole batch of pancakes at once. Instead of individually preparing a single pancake at a time, the batter is poured into a greased baking sheet and cooked all at once with a variety of toppings. Once baked the giant pancake is sliced into servings and enjoyed just like a regular pancake without the downside of tedious cooking of individual pancakes.

How to know when pancakes are done?

You can test whether the pancakes are done by inserting a toothpick or test stick in the center of the baked pancake. If it pulls out clean, the pancakes are cooked. A properly baked sheet pan pancake will be firm but springy when pressed.

Do I need to oil the pan before I pour the batter?

To prevent sticking it’s a good idea to grease the baking sheet before pouring in the batter. Lining the bottom of the baking sheet with parchment paper can also help remove the pancakes easier.

How long do you bake these pancakes?

In general, depending on your oven these pancakes will be done in about 15 minutes. It is important to test for doneness to make sure the pancakes are properly cooked before serving.

Do you flip these sheet pan pancakes?

Another great feature of sheet pan pancakes is that you don’t need to flip them. They cook evenly from both sides in the oven. Perfectly cooked pancakes every time!

Does this recipe work with homemade pancake mix or boxed mix?

Ingredients 

  • 2 cups all-purpose flour
  • 1/4 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon kosher salt
  • 2 large eggs
  • 1 1/4 cups whole milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla

Toppings:

  • 1 1/2 tablespoons seedless strawberry jam, slightly warmed
  • 1/4 cup sliced strawberries
  • 1/4 cup chocolate chips
  • 1/4 cup blueberries
  • 1 1/2 tablespoons unsalted butter, melted
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon
  • maple syrup, butter, or powdered sugar , for serving

Instructions

  • Preheat the oven to 425°F. Lightly grease a large 9×13 baking sheet with butter or cooking spray and set aside.
  • Whisk together the flour, brown sugar, sugar, baking powder, and salt in a large bowl until well combined. Add the eggs, milk, butter, and vanilla and combine well.
  • Pour the mixed batter into the greased pan and spread evenly.
  • Take a few spoonfuls of strawberry jam and swirl into one quadrant of the batter using a knife or toothpick.
  • In another quadrant sprinkle fresh blueberries, and add the chocolate chips to a third quadrant.
  • For the final quadrant mix together the melted butter, cinnamon, and brown sugar until well combined and swirl into the batter using a knife or toothpick.
  • Bake the pancake at 425°F for 15-18 minutes until a toothpick inserted into the center pulls out clean.
  • Allow the pancake to cool slightly before butting into slices and serving with your favorite syrup, jam, butter, or topped with powdered sugar.
