This cake recipe was common during the Great Depressions. At this time, families had to make do with minimal ingredients and the family food budget was small. Some families had a $5 a week food budget. Desserts were considered a luxury and there were many dessert recipes that came out to make a little go a long way. Also called a Poor Man’s Cake, this cake was an affordable alternative because it was made with several substitutions and omissions like no eggs or milk.

Can I Make This Chocolate Depression Cake Gluten Free?

You can use gluten free flours to make this chocolate depression cake, but it will have a slightly different texture and taste. You might have to play with the measurements of your wheat flour substitute of choice to get it just right. Rice flour seems to be the flour alternative of choice from other recipes I have seen.

How to Store this Eggless Chocolate Cake Recipe

It is important to make sure that this cake is covered well. I have noticed that this cake seems to dry out faster than a traditional cake. I have heard some people say they prefer the cake the next day once it has set further. I like it either way. Make sure to cover the cake well to make sure it will last the longest possible.

Should this Depression cake be Stored in the Refrigerator?

You do not want to store this cake in the refrigerator. It will leave the cake tasting dried out and stale before it has gone bad. By storing the cake at room temperature, the cake will taste its best for up to 5 days.

This cake is a good choice to use as a freezer dessert. You can cut the cake into slices and then freeze each slice. This makes it easier to take a few slices of cake out of the freezer at a time, without taking out the entire cake. This helps the cake to last longer.

How to Make an Eggless Chocolate Cake Recipe:

Preheat oven to 350°F.

Grease an 8-inch square pan with butter.

In the greased pan, combine the flour, cocoa powder, sugar, baking soda, and salt.

Whisk lightly with a fork or small whisk to combine.

Make two small wells on the sides and 1 large well in the middle of the dry ingredients.

Pour the vinegar and vanilla into the small wells then pour the oil in the big well, if they spill over the wells that’s perfectly okay.

Pour the water over the top and whisk again to combine thoroughly.

Bake for 30-35 minutes or until a toothpick inserted comes out clean.
