Prepare your bundt pan by spraying it liberally with nonstick cooking spray, then set the pan aside.

Pour the flour and baking soda into a medium bowl. Whisk to combine.

In the bowl of a stand mixer, add the pumpkin, cinnamon, eggs, oil, apple cider, and pumpkin pie spice. Mix on low until fully combined.

Slowly add the dry ingredients to the stand mixer bowl, continuing to mix on low until all ingredients are incorporated.

When the Instant Pot has finished cooking, do a natural release and carefully remove the lid.

Use the trivet’s handles to carefully remove the pumpkin apple bundt cake and set the cake pan on a wire cooling rack. Remove the foil and allow the cake to cool completely.

When the cake is cooled, flip the pan over on a flat surface and remove it from the pan.

Top the pumpkin apple cake with cream cheese frosting and crushed walnuts before serving.

  • 1/2 can pumpkin 15 oz., about 1 cup
  • 1/2 tsp cinnamon
  • 1/2 tsp pie spice
  • 1 1/2 cups sugar
  • 2 eggs, room temp
  • 1/2 cups vegetable oil
  • 1/4 cups apple cider
  • 1/2 cup apples, peeled, hull removed, and diced
  • 1 1/2 c all purpose flour
  • 1 tsp baking soda

  1. Spray the inside of your bundt pan with non stick spray.
  2. Set to the side.
  3. In a medium bowl add your flour, baking soda, whisk to combine.
  4. In a bowl of a stand mixer add your pumpkin, cinnamon, sugar, eggs, oil, apple cider, and pie spice.
  5. Mix on low to fully combine.
  6. Slowly add in dry ingredients and continue to mix on low to combine.
  7. Remove the bowl from the stand mixer.
  8. Add diced apples and lightly stir to combine.
  9. Do not over stir.
  10. Pour your mixture into the bundt pan, 3/4 of the way full.
  11. Put aluminum foil over the top of your bundt pan.
  12. Put a trivet inside your Instant Pot.
  13. Pour 2 cups of water in the bottom of your Instant Pot.
  14. Put lid on and set to manual.
  15. High pressure, for 25 minutes.
  16. Do a natural release.
  17. Then carefully lift lid, and remove the lid.
  18. Remove the bundt pan and set to the side.
  19. Remove the foil.
  20. Allow the cake to cool before flipping over.
  21. Top with a cream cheese frosting and crushed walnuts.
