An eclair is a French pastry made from choux dough filled with cream or custard and topped with chocolate icing.
How do I keep my crust soft and not crunchy hard?
When you make the crust, do not overmix it. When you press it into the pan, do not press really hard. You want to press it in the pan, although not put too much force on it.
Are there any variations that I can implement into this recipe?
Certainly! You could use Nilla Wafers for the crust, or Ladyfinger Cookies. You could use Chocolate pudding in place of the vanilla pudding. Make your own Whipped topping mix instead of using store-bought.

- Vanilla pudding mix
- Cool Whip
- Milk
- Chocolate Frosting
- Graham Crackers

How To Make Eclair Cake:
Step 1. In a baking pan (13×9) layer the bottom with crackers.
Step 2. Mix the Cool Whip and Pudding.
Step 3. Add in the milk and mix.
Step 4. Spread half of the pudding mixture on top of the graham crackers at the base.
Step 5. Layer more crackers on top of the mixture and repeat one more time.
Step 6. Spread the chocolate frosting over the top of the graham cracker until covered.
Step 7. Put in the fridge for 4 hours or more. Serve and enjoy!

- 3 C Milk
- 16 oz Chocolate Frosting
- 16 oz Graham Crackers, or something similar.

Instructions
- In a baking pan (13×9) layer the bottom with crackers.
