I get so tired of eating the same thing over and over again. That’s why I’m always on a mission to find new and flavorful food that my entire family will love. I have been playing around with my instant pot for a while now, and I knew that I wanted to try to make arroz con pollo. Let me just tell you it turned out beautifully, and everyone raved about how good and delicious it was. I was happy because it was so easy to make and it gave me lots of time to work on the dessert instead.

Don’t worry if you don’t have a lot of experience using your instant pot; this would be a perfect recipe to start with. I know that working with a pressure cooker can be scary the first few times, but I promise once you get the hang of it, it’s effortless. This instant pot chicken and rice recipe is exactly something you could start with, and you will have beautiful results every single time.

What is Arroz Con Pollo

Arroz con pollo is a dish that is traditionally made with rice, onions, and it has saffron in it. For my recipe, I’ve also included chicken as well as basmati rice and other vegetables and seasoning. This dish is well known in Spain.

Can I Use Bone In Chicken

Yes, you can use bone-in chicken if you want to. However, you will have to deal with bones being in the chicken, and that is why I usually use boneless chicken tenders. It’s entirely up to you how you would like to make this arroz con pollo.

What does saffron taste like?

Saffron has a flavor that is both sweet and oftentimes earthy flavored. Many people say that saffron has a honey flavor, as well as a hint of floral flavors.

Storing Leftovers 

For best results, you will need to let the arroz con pollo cool down after you have removed it from the instant pot. After it cools, you can place it inside of food storage containers. It will last in the refrigerator for up to 5 days.

Another option would be to heat it in the microwave to reheat the arroz con pollo; you will need to place it in the microwave for 1 to 2 minutes or until this hot. Be sure to stir it every once in a while to make sure it cooks evenly. Lastly, you could heat it up on the stovetop in a saucepan or Skillet. You may need to add a little bit of chicken broth, so it is not too dry one, or two tablespoons should be enough.

Does Arroz Con Pollo Freeze Well?

Yes, you can’t freeze arroz con pollo. After it has cooled, splice into a freezer-safe container that has a tight-fitting lid. You can freeze it for up to two months—Thaw in the refrigerator before serving.

Ingredients

You don’t need a ton of ingredients to make this arroz con pollo instant pot recipe. Mostly you need some chicken, seasoning, onions, bell peppers, and of course, does basmati rice. Let’s take a closer look at the ingredients you’ll be needing to make this delicious and savory dish. 

  • Boneless chicken tenders
  • Paprika
  • Salt and pepper to taste
  • Olive oil
  • Onion, chopped
  • Green pepper, diced
  • Red pepper, diced
  • Minced garlic
  • Basmati rice
  • Chicken broth
  • Saffron
  • Curry
  • Bag of frozen mixed vegetables (corn, carrots, peas and green beans)
  • Green onions

How Do You Make Arroz Con Pollo In Instant Pot 

With these step-by-step directions, you shouldn’t have any trouble creating and making this tasty arroz con pollo recipe. Let’s get started so you can see how easy it is to make.

Step 1: Begin by turning on your instant pot to the saute setting. Add in the olive oil and allow it to heat up for a minute or so. Then add the diced chicken and cook it for 5 to 8 minutes so it can brown up. After you have cooked chicken, remove it from the instant pot and set it aside. 

Step 2: Place more olive oil onions peppers and garlic in the instant pot and begin sauteing them for 3 to 5 minutes. Be sure to stir them often, so they cook evenly. 

Step 3: Or in the chicken broth, saffron, frozen vegetables, and cook chicken. Next, ingredients well to combine them. Continue cooking for 5 minutes.  

Step 4: Add the lid to the instant pot and turn it to manual. After it is done cooking, allow the pressure to release naturally for 10 minutes. After 10 minutes, turn the vent valve to release the rest of the pressure with a wooden spoon or towel. Take off the lid and hit cancel. 

Step 5: Now, it’s time to serve this arroz con pollo. Add some diced green onions and enjoy the warm.

Ingredients 

  • 5-6 boneless chicken tenders
  • 2 tsp. paprika
  • Salt and pepper to taste
  • 4 tbsp. olive oil
  • 1 cup onion, chopped
  • 1 cup green pepper, diced
  • 1 cup red pepper, diced
  • 1 tbsp. minced garlic
  • 2 cups basmati rice
  • 3 cups chicken broth
  • 1/2 tsp.saffron
  • ½ tsp. Curry
  • 1 bag of frozen mixed vegetables, corn, carrots, peas and green beans
  • Green onions

Instructions

  • Turn on the Instant Pot ON and select "sauté"
  • Add the olive oil.
  • Add the diced chicken and cook for 5 - 8 minutes,
  • Remove chicken from the Instant Pot and set to the side.
  • Add half of the olive oil, onion, peppers, garlic.
  • Saute’ 3-5 minutes, stirring often.
  • Add chicken broth, saffron, frozen vegetables, and cooked chicken.
  • Mix to combine.
  • Cook for 5 minutes.
  • Secure the lid to the Instant Pot.
  • Select manual cooking time to 10 minutes.
  • Pressure release on its own for 10 minutes.
  • Turn the valve to Vent to release pressure.
  • Then remove the lid.
  • Press "cancel".
  • Garnish with diced onions
