Tomato soup is one of the biggest comfort meals. Whether you are making to with grilled cheese, to warm up on a cold day or just because you are craving the rich flavor, this creamy tomato basil soup recipe is sure to be a crowd pleaser.

If you have read some of my other recipes, you know that my Instant Pot is my best friend in the kitchen. It makes everything so much easier. I can get the deep rich flavor of a slow-cooked soup in no time at all. I don’t have to spend all day making soup. This easy tomato soup can be ready in minutes.

What Tomatoes are best for Fresh Tomato Basil Soup

While some tomato soups call for fresh tomatoes, in this recipe, because I want to make as easy as possible, I am using tomato paste and canned diced tomatoes. The reason I like canned tomatoes is that the tomatoes are already cooked most of the way. The tomatoes cook during the canning process and that means they are closer to being ready when you start this soup. I like to use the tomato paste because it adds the rich tomato flavor I am looking for in the roasted tomato basil soup while also thickening the soup.

If you choose to use fresh tomatoes, you can use Roma, plum or tomatoes on the vine. Cut the tomatoes in half, drizzle them with oil and roast them in a 400 degree oven for about 40 minutes. This gives a roasted flavor to the soup much like you would get with the canned tomatoes.

Can I Make this Roasted Tomato Basil Soup on the stovetop?

What I love the most about this roasted tomato basil soup is that it is made in the Instant Pot because it is fast and easy. If you do not want to use the Instant Pot or you do not have one, you can make this creamy tomato basil soup recipe on the stove. You will make the soup the same except instead of cooking in the Instant Pot for 5 minutes, you will cook it low and slow on the stove for about an hour to two hours depending on the amount of time you have.

Tips for Straining Easy Tomato Basil Soup

With this Instant Pot Easy tomato soup, you do not need to strain the soup. This style of soup isn’t the soft, creamy soup that you get when you are using condensed soup. If you find that you want a creamier version of this soup you can use an immersion blender or pour the soup into a regular blender in order to break down the chunks. If you would like it to be even more broken down, you can use a fine-mesh strainer and drain the soup, or strain the soup through cheesecloth.

Ingredients in Instant Pot Easy Tomato Soup with Basil

  • celery
  • onion
  • carrots
  • Olive oil
  • Tomato paste
  • diced tomatoes
  • Chicken broth
  • Dried basil
  • Oregano
  • All purpose flour
  • Butter
  • Half and half
  • Parmesan cheese
  • Salt and pepper

How to Make Fresh Easy Tomato Basil Recipe

Set the Instant Pot to the saute function, and add in 1 tablespoon of the olive oil.

Place the chopped vegetables into the Instant Pot once heated, and cook for 2-3 minutes. veggies in the instant pot

Mix in the chicken broth, diced tomatoes, tomato paste, oregano, and basil. start of easy tomatoe soup in the instant pot

Close the lid on the Instant Pot, and make sure the release valve is in the sealing position.

Set the Instant Pot to manual for five minutes, and then allow it to naturally release for another 5 minutes once the cook time has finished.

While the soup is cooking, melt ½ cup of butter in a saucepan on the stove over medium heat.

Add the all purpose flour to the saucepan and mix the butter and flour into a roux. Continue to cook down stirring often until the roux becomes a rich brown color. roux for tomato soup

Once the soup has finished cooking in the Instant Pot, ladle a cup of it into the roux, and stir well. Continue to ladle more cups of the soup into the roux mixture until it becomes less thick, and then add it into the main soup base. Stir well to combine completely.

Mix in the half and half and parmesan cheese to the soup mixture.add half and hal to soup

Add well as salt and pepper to taste.

Serve with fresh croutons and basil leaves as garnish if desired.
