Seeing as it is a secret ingredient, it is hard to say for sure. It is believed that mashed potato is the secret to the Krispy Kreme Doughnut. However, this has not been proven, so I would say it is just the way the doughnuts are made.

What makes the Krispy Kreme doughnut so special?
It is believed that the yeast dough goes through the company’s proprietary pressurized extruder and then raises or proofs for 30 minutes.
What are the ingredients for Krispy Kreme doughnuts?
The Krispy Kreme doughnut copycat recipe uses yeast, flour, sugar, water, egg and butter.
What is the Krispy Kreme doughnut glaze made of?
A simple mix of confectioners sugar, hot water, butter and vanilla.
Ingredients:
- Boiling water
- Granulated sugar divided
- Dry active yeast
- Milk
- All-purpose flour
- Large egg
- Melted butter
- Oil for cooking
Glaze ingredients:
- Hot water
- Powdered sugar
- Vanilla extract
- Melted butter
How To Make Krispy Kreme Doughnuts:
Place the boiling water, 1 tsp. Sugar, yeast, and milk into a bowl, stir and allow to sit for 10 minutes untouched.
In a separate bowl, combine the melted butter, 2 ¾ cups of flour, and the remaining sugar.
Add the egg and the yeast mixture to the flour mixture, and blend until a dough has formed.
Add more flour as needed to the mixture until the dough pulls away from the spatula with ease. The dough should still be tacky to the touch at this point.
Place the dough on a floured surface and knead for about 5 minutes, adding a bit of flour as needed until the dough is not tacky anymore.
Put the dough into a bowl that has been greased, and cover. Allow the dough to rise in a warm area for an hour.
Make four even sections with the dough, and roll each section into a log shape on a floured surface. Each log of dough should be no more than 2 inches wide.
Cut each log of dough into 15 pieces and roll them into balls.
Place several inches of oil into a deep-sided skillet and bring to 350 degrees.
Cook the balls of dough for a few minutes in the oil until golden brown.
Drain on a paper towel-lined plate.
Combine the ingredients for the glaze until smooth.
Dip the warm donuts into the glaze.
Allow them to sit for several minutes before you serve.
