Not to toot my own horn, but I love how amazing this lucky charms dessert turned out. The way I chose to decorate the cereal cake is lovely, and I got more compliments on it than any of my other desserts. I am well known amongst friends and family for making cakes and other desserts.

They just know that if I am invited somewhere that I am going to make something that will blow their minds.

I was inspired to make this layered cake because of my love of Lucky Charms cereal. It’s one of those breakfast cereals that always tastes good, and you can’t help but smile as you eat it. The sweet colorful marshmallows give you a burst of energy in the mornings too. So after I was inspired to make this Lucky Charms layered cake, I got in the kitchen and got to work.

The way it turned out was AWESOME! 

Tips for Making A Layered Cake 

  • Don’t overmix the cake batter so the cake is light and fluffy. 
  • It’s very important to use a non-stick spray. You never want the cakes to stick in the pans, or the layers won’t turn out correctly. 
  • Be careful not to overbake the layers for the cake. 
  • Use a cake leveler to ensure that all the layers are even. This will give you better results when it’s time to frost it. 
  • Practice makes perfect. The more layered cakes you make, the better you will get at it. It takes some practice, but I promise you will get used to it, and they will turn out beautiful.

What Frosting To Use For Lucky Charm Cake 

I recommend using my homemade frosting recipe. It’s delicious and spreads easily when you are decorating the layered lucky charms cake. Or, you can purchase commercially prepared frosting too. It’s totally up to you and your desires. 

How to Store This Cake 

For best results, this lucky charms dessert should be stored in the refrigerator in an airtight container. The cake typically lasts up to 3-4 days.

What Size Pans To Use For This Layered Cake 

To make this lucky charms cake, you will need three 9-inch cake pans. They are the perfect size to give you gorgeous layers. You could use a large sheet pan if you don’t want a layered cake, or opt for cupcakes instead. 

Ingredients

This is such an easy cake, and it makes a significant impact on anyone who tastes it. The bright colors are brilliant and make the cake hard to resist. 

  • Two boxes of white cake mix
  • Six large egg whites
  • 2 C water
  • 1 C Canola oil
  • Three 9inch round cake pans
  • Three 10inch round cake board
  • Pam baking spray

Vanilla frosting

  • 2 C unsalted butter, softened
  • 5 C powdered sugar
  • 2 tsp pure vanilla extract
  • 3-6 TBSP heavy whipping cream
  • Sky Blue, Purple, Pink, Red Gel food coloring
  • 1 Large piping bags with a star tip
  • One mini angled spatula
  • One regular size of Lucky Charms
  • 1 C white chocolate melting chips
  • One squeeze bottle

How to Make Lucky Charms Cake

Okay, let’s get down to the details on how you can make this lucky charms dessert. It’s really pretty simple and mostly just takes a little bit of time. Let’s get started:

First Step: Preheat the oven to 350 degrees and spray the three cake pans with baking spray.

Second Step: Combine all cake ingredients into a standing mixer or large mixing bowl Sand beat until combined.

Third Step: Divide the batter between the three pans and bake in the oven for 28-32 minutes or until a toothpick comes out clean.

Fourth Step: Allow the cakes to cool completely before moving onto the cake board.

Fifth Step: Using a cake leveler, remove the dome from the cakes to make even.

Sixth Step: Using a standing mixer, beat together the butter, powdered sugar, vanilla, and heavy whipping cream until combined, smooth and stiff with peaks.

Seventh Step: Scoop 1/2 C of frosting into four bowls.

Eighth Step: Mix in a few drops of color into one bowl—repeat steps for remaining colors.

Building the cake directions:

First Step: Using one cake layer on the cake board, scoop 1 C of frosting onto the top of the cake and spread evenly.

Second Step: Sprinkle ¾ C of lucky charm cereal all over the frosting layer.

Third Step: Place the second layer of cake on top of the first layer of cereal frosting. Scoop another 1 C of frosting onto the second layer of cake and spread evenly.

Fourth Step: Sprinkle another ¾ C of lucky charms.

Fifth Step: Place the last layer of cake on top.

Sixth Step: Frost the entire cake with the remaining white frosting.

Seventh Step: Take a knife and outline a wide area where you’re going to stick marshmallows.

Eighth Step: Remove all marshmallows from the remaining cereal.

Ninth Step: Carefully place the marshmallows in the area you created on the side of the cake and to the middle of the top of the cake.

Tenth Step: Place the white chocolate chips into a medium heat safe bowl.

Eleventh Step: Place the bowl in the microwave on 45-second increments or until melted.

Twelfth Step: Scoop into the squeeze bottle.

Thirteenth Step: Pipe drips along the top edge of the cake.

Fourteenth Step: Pipe frosting around the top edge of the cake.

Fifteenth Step: Cut and enjoy!
