Why do I love this recipe?
While a taco is made using tortillas or taco shells, a grilled cheese sandwich is made with bread and cheese, so if you find yourself with taco ingredients but no tortillas, or you just fancy a change, this recipe is delicious, easy and a perfect way to combine these two cuisines.
How to Serve Them:
Enjoy these taco grilled cheese sandwiches hot from the pan, and don’t forget the napkins. They can be a little messy to eat.
Can You Make Them Ahead?
The sandwiches are best served as soon as they’re cooked, so although you could prepare the individual components beforehand, it’s probably better to make and cook them together, since the recipe is so quick to prepare anyway. Also, if you add the meat mixture ahead of time, you risk the sandwiches getting soggy.

Storage Instructions:
Leftovers will keep for a day or so in the refrigerator and you can crisp them back up in a skillet, although they will be a bit soggier the second time around. They aren’t a good candidate for freezing because they will fall apart once thawed.
Variations and Substitutions:
Ground turkey or pork can be used in place of ground beef, and you can use some readymade taco seasoning powder instead of the individual spices. If you aren’t keen on guacamole, you can omit it, or else use freshly sliced avocado. Another variation is using mayonnaise instead of butter on the outside of the sandwiches.
