White Sauce Mexican Casserole
Ingredients
- 1 lb. ground beef 80/20
- 1/2 C onion, finely chopped
- 1 pack hot taco seasoning mix
- 2 C shredded cheddar cheese
- 1 can refried beans
- 1 C prepared mexican rice
- 1 can fire roasted corn, drained
- 4-5 large flour tortillas, cut in half
- 8 oz of thick chunky pico de gallo
- ½ cup sour cream as garnish
- 2-3 fresh jalapenos as garnish
- Cilantro as garnish

Instructions
- Spray your casserole dish with cooking spray.
- In a large saute pan brown ground beef ,taco seasonings, and onion.
- Drain the beef and set to the side.
- Lay the 2 half tortillas in the bottom of the baking dish.
- Add 1/3 of the beans on top of the tortillas and spread evenly.
- Now add 1/3 of the meat and add some cheese, spread evenly.
- Add the second halves of the tortilla, then some of the rice, half of salsa, and some of the corn and cheese.
- Add the third layer of half tortillas, some of the beans , meat, and cheese.
- Add the fourth half layer tortillas, then some beans, meat, corn, rice, salsa and cheese.
- Cover with foil.
- Bake for 350 for about 40 minutes.
- Set to the side for 5 to 10 minutes.
- Garnish as desired.
