Twice Baked Potato Casserole
We pretty much eat some form of potatoes with almost every meal we make.
We can’t resist the flavor and texture of potatoes. I know if you’re a low carb person, potatoes are your worst enemy. But I don’t eat low carb most of the time, and the way that you can adjust potato recipes to fit your needs is fantastic.
Plus, they have a lot of fiber in their skin, and they’re just plain delicious.
If you’ve ever made twice baked potatoes, you already know that there a fair amount of work. It’s not so much work that it’s not worth making them, but I thought it would be fun and a new twist to make a twice baked potato casserole.
I have to tell you guys the baked potato casserole turned out Splendid! I think you’re really going to love the way it tastes and the presentation.
Best Variety of Potatoes To Use
I have found the best potatoes to use are Yukon Gold potatoes. You’ll need around 5 lb to make one batch of these cheesy potatoes. If you have found that you’re out of Yukon Gold potatoes or would rather use a different variety, that is more than fine. Any potato that has yellow skin would work well, or you could even use russet potatoes.
Do You Cook The Bacon First
yes, when making this baked potato casserole, you will need to pre-cook the bacon. I usually cook the bacon while the potatoes or baking in the oven. That way, when the potatoes are ready to go, you’re ready to make the casserole. Cook the bacon, so it’s crispy and then crumbles it up. You don’t want slimy bacon on these potatoes.
If you try to skip cooking the bacon ahead of time, it will not cook fast enough in the dish.
Variations To Recipe
Keep in mind I love everything about the flavor of this potato casserole. However, I wanted to give you a few variations to the potato casserole so you can make adjustments as needed. Here are some of our favorite twists and flavors that I think you’re going to enjoy.
- Cheese -you can use a variety of cheese. I use mozzarella and sharp cheddar cheese. However, you could use something that’s a little stronger like gouda, Colby jack, or even Swiss. There are no wrong answers when it comes to cheese so go while.
- Ranch dressing -instead of using sour cream, you could top the potatoes with ranch dressing. We pretty much eat ranch dressing on all of our meals at our house!
- Prosciutto -if you want to have some extra elegant and fun potatoes add in some prosciutto. Just slice it up and added on top. The flavor is so elegant and delicious.
Storing Leftovers
You should store the leftover baked potato casserole in the refrigerator. Be sure to let it cool before storing and add a lid to keep it airtight. The leftover potato bacon casserole will last in the refrigerator for up to 5 days. Reheat it in the microwave for 1 to 2 minutes or until it’s hot.
You can also bake it in the oven at 350 degrees for 10 to 15 minutes or until it’s hot all the way through.
Does Twice Baked Potato Casserole Freeze Well
Yes, you can actually freeze this twice baked potato casserole. After cooked, you’ll need to keep it in a food storage container and leave it frozen for up to two months. Defrost in the refrigerator overnight and reheat in the microwave or the oven.

- 5 LBS of Yukon Gold potatoes, baked
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
- 2 LBS thick cut bacon, cooked and chopped
- 2 C sour cream
- 2 C Mozzarella Cheese, shredded
- 2 C Sharp Cheddar Cheese, shredded
- 4 Green onions, chopped
- 1 Squeeze bottle

How To Make Twice Baked Potato Casserole
First Step: Pour the sour cream into the squeeze bottle.
Second Step: Preheat oven to 350 degrees and grease a 9×13 baking pan with cooking spray, set aside.
Third Step: Cut the baked potatoes into bite-size pieces.
Fourth Step: Place half of the cut potatoes onto the bottom layer of the baking pan and then sprinkle with salt and pepper.
Fifth Step: Add half of the chopped cooked bacon onto the top of the potatoes.
Sixth Step: Drizzle the sour cream over the bacon, it won’t fully cover it all, and that is ok.
Seventh Step: Sprinkle half of the Cheddar cheese and Mozzarella Cheese on top of the potato casserole.
Eighth Step: Layer the last layer of potatoes on top of them and a bit more cheese.
Ninth Step: Sprinkle the remaining amount of bacon and drizzle the sour cream on top.
Eleventh Step: Sprinkle the remaining cheese on top and green onions.
Twelfth Step: Cover with foil and place into the oven and bake for 30 minutes.
Thirteenth Step: Remove the potato casserole from the oven and allow to cool slightly.
Serve hot and enjoy!
