Most people put syrup or fruit compote on pancakes. These particular savory pancakes are better served with sour cream, perhaps with a few chives. Any kind of pancake is great with butter.
What is the secret to puffy pancakes?
If you let the batter sit for a minute or so, that will make the pancakes extra fluffy. If you want them extra fluffy, separate the eggs and whip up the whites. With the batter itself, remember not to overmix. When you have the batter on the grill, wait until you see bubbles before flipping.
Does baking soda make pancakes more fluffy?
The baking soda can make pancakes fluffy, but you have to use sour milk or buttermilk as well. This is because baking soda needs acid in order to work. Don’t use too much or too little.
